🐴🌮 From the ranch to Conchitas! 🤠🇲🇽

Did you know discada has its roots in Northern Mexico, especially in places like Chihuahua? The name comes from the “disco”—a large agricultural plow disc that ranchers and cowboys traditionally repurposed as a cooking surface. Different meats were cooked together with peppers, onions, tomatoes, and seasonings, creating a meal meant to be shared with family and friends. 🔥🥩

At Conchitas, we’re proud to keep that tradition alive with our own flavorful discada, served up in our fresh tortillas made daily. 🫓❤️

And judging by this picture, this little cowboy already knows where he’s headed! 🐎🤠 He’s on his way to Conchitas to celebrate his 6th birthday with some good food and family! 🎂🎉

The Things You Don’t See 🍽️

Yesterday was one of those days.

We stayed busy from the moment we opened until the moment we locked the doors. Orders kept coming in, the phone never stopped ringing, customers needed help, catering had to be planned, prep for tomorrow had to get done… and somewhere in all of that, I forgot to eat.

After closing the restaurant, cleaning the kitchen, and getting everything ready for the next day, I finally made myself a quick plate of Discada Fries.

It’s funny how one plate of food can fill more than just an empty stomach. After all the chaos, it fills a void.

Running a restaurant isn’t just cooking. It’s the missed meals, the constant running around, solving problems, making sure your team is okay, listening to customers, being a therapist, a manager, a cook, a dishwasher, and somehow still finding the energy to smile.

People usually only see the finished plate when it hits the table. They don’t always see everything that happens behind the scenes to make that moment possible.

To everyone who’s supported us, been patient with us, and continues to choose us—thank you. It truly means more than you know.

Now it’s time to recharge… because, we get to do it all over again. ❤️🌮
