It was a wonderful evening of exploring Loire Valley w**es, and Nikki’s food pairings were excellent. We hope everyone enjoyed discovering how each pairing brought something different out of the w**es.

Join us on Thursday, August 27 from 7:30–9:00 PM for our Soul of the Mediterranean W**e Dinner, featuring Chef Kelly DeLaire and Neal Thornton from Orsini W**es.

Chef Kelly has prepared an outstanding Mediterranean-inspired four-course menu, and Neal will pair a w**e with each course to bring the entire dinner together.

First Course — Caponata Siciliana
Traditional sweet-and-sour eggplant with peppers, celery, olives, capers, pine nuts, and golden raisins, served with grilled ciabatta.

Second Course — Busiate al Pesto Trapanese
Hand-twisted pasta tossed with Sicily’s famous pesto of tomatoes, almonds, basil, garlic, Parmesan, and olive oil, finished with toasted breadcrumbs and fresh basil.

Third Course — Pistachio-Crusted Pork Tenderloin
Herb-marinated pork tenderloin coated with Sicilian pistachios, garlic, lemon zest, fresh parsley, and Pecorino Romano. Roasted until tender and finished with a silky lemon beurre blanc, fingerling potatoes, and asparagus.

Dessert — Pistachio Cannoli Trifle

Nikki brings a unique perspective to every tasting. After training at Kendall College in Chicago—one of the country's premier culinary and hospitality schools—she built her career in the city's renowned restaurant scene, working both front and back of house. Her passion for food and w**e eventually took her to Europe, where she immersed herself in local food traditions through the WWOOF (Worldwide Opportunities on Organic Farms) program. Living and working on farms, Nikki learned traditional cheesemaking, olive oil production, and w**emaking firsthand. Her knowledge comes not only from study, but from harvest, fermentation, and sharing meals at the end of a day's work.

During the class, Nikki will guide you through a curated selection of Loire Valley w**es, sharing the history, styles, and character that make this celebrated region one of France's most diverse w**e destinations. Each w**e will be paired with carefully selected cheeses designed to complement and elevate the tasting experience, making this an evening that's as delicious as it is educational.
