🇪🇸💀🍷 Vinos de los Mu***os — A Día de los Mu***os Journey Through Spain

What a night with the North Dallas Early Childhood PTA! An absolutely fantastic group that came ready to have some fun, learn a little, and—most importantly—enjoy some great Spanish w**e.

We traveled across Spain one glass at a time:

🥂 Villa Conchi Brut Rosé Cava — Pink bubbles to get the party and palates started.
🌊 Bagoa do Miño Albariño, Rías Baixas 2023 — Bright, crisp and refreshing from Spain’s Atlantic coast.
🍷 Cune Imperial Rioja Reserva 2020 — Smooth, rich and full of classic Spanish Tempranillo character.
🔥 Iugiter Les Notes Priorat — Big, bold and the perfect way to finish the trip.

Great w**e is always better when you get to share it with great people, and this crew made the evening an absolute blast.

An incredible evening in Fort Worth. 🍷

I had the pleasure of partnering with Bespoke Life •K• and the incredibly talented team that Bespoke Life brought together for an unforgettable private dining experience.

Chef Laurent delivered an exceptional multi-course menu, Bespoke Life brought the evening together beautifully, and I got to do my favorite part—assisting with a lineup of w**es designed to make each course just a little more memorable.

Some w**es remind you why certain vineyards have been revered for centuries. This is one of them. 🇫🇷🥂

The 2022 Pascal Bouchard Les Clos Chablis Grand Cru Vieilles Vignes was an absolutely stunning bottle—and a serious step up in what Chardonnay can become in Chablis.

Les Clos is the largest of Chablis’ seven Grand Cru climats, and this old-vine expression had everything you hope to find at this level: concentration without heaviness, richness without excess, and incredible precision from the first sip to the last.

Beautiful layers of ripe citrus, green apple and stone fruit gave way to chalky minerality, saline freshness and a long, beautifully textured finish.

But what impressed me most was the balance.

There’s real power here, but it never overwhelms the w**e. Instead, everything feels composed, confident and completely in place.

This is the kind of bottle you slow down for.

The kind that evolves in the glass.

And the kind that reminds you why Grand Cru Chablis belongs among the great white w**es of the world.

Absolutely exceptional. 🍋🪨🦪

Some w**es deserve an occasion. Others create one. 🍷

A recent evening neighborhood bottle was Château-Figeac 2021 — Saint-Émilion Premier Grand Cru Classé — and it was every bit as special as the name suggests.

Figeac has always marched to its own beat in Saint-Émilion. More Cabernet, beautiful gravel soils, and an elegance that feels almost effortless. Dark fruit, violets, graphite, cedar, silky tannins and a finish that seemed in no particular hurry to leave.

The 2021 is also a little piece of Bordeaux history — the final vintage before Figeac was elevated to Premier Grand Cru Classé A in 2022.

Still young? Absolutely.
Already gorgeous? Without question.

But the best part wasn’t the classification, the château or even the w**e.

It was drinking it with good friends a few houses away.

Great w**e doesn’t need to be intimidating. It just needs to be shared. 🇫🇷🍷

🍷 A Beautiful Surprise from Bierzo! 🇪🇸

Had the opportunity to taste the Emilio Moro Polvorete Bierzo Godello 2024, Bodegas Emilio Moro and this one was a fantastic surprise.

I didn’t know what to expect going in—kind of like being a dad experiencing an SEC school Sorority Bid Day for his oldest daughter! 😂 But just like Bid Day, the experience turned out to be amazing.

Made from Godello, one of Spain’s most exciting white grapes, Polvorete delivers bright citrus, green apple, white flowers, subtle minerality, and a beautifully clean finish. 🍋🍏🌸

What really stood out was the balance between freshness and texture. Crisp and lively, but with enough weight and complexity to keep things interesting.

Bierzo continues to prove that it deserves a spot on the radar, and Polvorete is a great introduction to both the region and Godello.

Fresh. Mineral. Elegant. Delicious. And definitely not what I expected—in the best possible way. 🇪🇸🥂

🍷 A GREAT NIGHT IN BURGUNDY & BORDEAUX 🇫🇷

This weekend’s tasting was a reminder of why French w**e is so endlessly fascinating — different regions, different grapes, different expressions, but one common thread: balance, place & character.

🥂 Louis Bouillot Perle de Vigne Crémant de Bourgogne Brut — Crisp, lively & elegant with beautiful bubbles. A fantastic way to start the evening.

🍋 Domaine Chatelain Petit Chablis 2024 — Classic Chablis freshness: bright citrus, minerality & that unmistakable flinty character.

🍷 Château Haut Cadet St-Émilion Grand Cru 2020 — Rich, polished & approachable, with ripe fruit, subtle oak & the structure you expect from Bordeaux.

🍷 Château Garraud Lalande-de-Pomerol 2018 — Plush, earthy & beautifully mature. Dark fruit, spice & a silky texture made this one a standout.

🍒 Domaine des Riottes Savigny-lès-Beaune 1er Cru 2020 — Elegant Burgundy at its best: red fruit, earth, spice & silky tannins with plenty of finesse.

Five w**es. Two legendary regions. One Family gathering. One fantastic evening. 🇫🇷🍷

Some w**es don’t become memorable because they’re bigger. They become memorable because they’re unmistakably themselves. 🍷🇫🇷

2024 Domaine Pascal Bouchard Petit Chablis

There’s a common misconception that great w**e has to be complicated.

I’ve found the opposite is often true.

The bottles that stay with me are the ones that express their origins with honesty and restraint, allowing the vineyard—not the w**emaker—to be the loudest voice in the glass.

This Petit Chablis is a reminder that the finest white w**es are often defined not by richness, but by clarity—bright citrus, crisp green apple, delicate floral notes, and the mineral precision that makes Chablis unmistakable.

Nothing feels exaggerated.

Nothing competes for your attention.

Everything is in balance.

That’s what makes w**es like this so compelling. They don’t ask you to decode them—they invite you to slow down, take another sip, and appreciate the beauty of precision.

Whether it’s paired with fresh oysters, grilled seafood, or simply enjoyed on a warm evening, this is the kind of bottle that proves elegance doesn’t have to announce itself.

If your Chardonnay needs butter and oak to be interesting, you’re tasting the w**emaking—not the w**e.

🍋 2023 Domaine Chatelain Chablis Premier Cru

One of the philosophies I come back to over and over is this:

𝗧𝗵𝗲 𝗯𝗲𝘀𝘁 𝘄𝗶𝗻𝗲𝘀 𝗱𝗼𝗻’𝘁 𝗶𝗺𝗽𝗿𝗲𝘀𝘀 𝘆𝗼𝘂 𝘄𝗶𝘁𝗵 𝗽𝗼𝘄𝗲𝗿. 𝗧𝗵𝗲𝘆 𝗲𝗮𝗿𝗻 𝘆𝗼𝘂𝗿 𝗿𝗲𝘀𝗽𝗲𝗰𝘁 𝘄𝗶𝘁𝗵 𝗽𝗿𝗲𝗰𝗶𝘀𝗶𝗼𝗻.

That’s exactly what this Chablis delivers.

Bright lemon, crisp green apple, crushed oyster shell minerality, and delicate white flowers come together with remarkable focus. Every sip has energy. Every flavor has purpose. Nothing feels exaggerated, and nothing is trying to steal the spotlight.

That’s what makes Chablis so compelling.

It doesn’t rely on heavy oak.

For me, great Chardonnay isn’t defined by what the w**emaker adds—it’s defined by what they’re willing to leave alone. When restraint meets exceptional fruit, the result isn’t less w**e. It’s more honesty.

Pair it with oysters, scallops, grilled shrimp, or simply pour a glass and let the w**e reveal itself one sip at a time.

🎉🍷 Happy Birthday, Julia! What. A. Night. 🍷🎉

Sixteen amazing friends and family. Seven incredible w**es. Two legendary w**e countries. And one very competitive game of Guess That Bottle! 🍾🕵️‍♂️

We traveled from the bubbles of Burgundy to Napa Valley, explored the crisp elegance of Sancerre, the rustic charm of the Rhône, the richness of Paso Robles, and finished with the timeless beauty of Oregon Pinot Noir.

🍷 A Taste of Bordeaux History 🍷

Some bottles are more than w**e—they’re time capsules.

The pour: 1982 Château Bellevue Saint-Georges – Saint-Émilion Grand Vin de Bordeaux.

Here’s the funny part…I didn’t drink this bottle tonight. I bought it and enjoyed it years ago—back before France converted to the Euro. I wasn’t a sommelier. I wasn’t studying w**e. I had 20 francs to burn on my way out of Paris.

What I didn’t realize was that I had stumbled upon one of the most celebrated Bordeaux vintages in modern history. The 1982 vintage changed the world of fine w**e, producing bottles renowned for their exceptional ripeness, balance, and longevity.

More than four decades later, collectors are still chasing great ’82 Bordeaux.

At the time, it was simply “a nice bottle of French w**e.” Looking back now, I laugh a little—and cringe a little more. If I had known then what I know now, I would have slowed down, paid closer attention, and appreciated just how special that bottle really was.

That’s one of the beautiful things about a w**e journey. Sometimes you don’t realize you’ve experienced history until years later.

Fortunately, every bottle—whether it’s a Tuesday night Cabernet or a legendary Bordeaux—teaches you something.
