White Chocolate Strawberry Cheesecake

Luscious Strawberry and White Chocolate Cheesecake

Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup white sugar
1/3 cup melted butter
2 cups fresh strawberries, sliced
1 tablespoon white sugar
2 teaspoons cornstarch
3 (8 ounce) packages cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
3 eggs
1/2 cup white chocolate chips, melted
Directions:
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
In a small bowl, toss the sliced strawberries with 1 tablespoon sugar and cornstarch. Set aside.
In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
Pour half of the cream cheese mixture over the crust. Spoon half of the strawberries and then layer with remaining cream cheese mixture. Top with remaining strawberries.
Drizzle melted white chocolate over the top.
Bake for 55-60 minutes, until the center is set. Allow to cool before refrigerating for at least 4 hours.

No, you guys!! This is definitely NOT just like ranch dressing, which is what people say every time they see this picture! This is a white barbecue sauce, it's a little sweet and tangy and it's absolute perfection over pulled pork or grilled chicken! Lots more ways to use it at the link!
