Monday means another maintenance day at VEx.
Today was grease trap service with NW Biofuel — not the glamorous side of restaurant life, but one of the most important.
This was our third service since taking over the space on 7/11/2025.
It’s fascinating how much happens behind the scenes to keep a restaurant running properly. It’s expensive, but necessary. We service our system every 6 months because handling small issues early prevents bigger problems later — including smells no restaurant wants guests to experience.
Guests see the bowls of pho, cocktails, and cozy atmosphere. Owners see the maintenance, cleaning, and constant care that keeps everything welcoming and comfortable.
Building something from the ground up means taking ownership of every detail, even the ones no one notices. The late-night cleaning, maintenance calls, unexpected expenses, and constant problem-solving are all part of creating a place where people can gather and feel at home. The unseen work may never make it onto the menu, but it’s the foundation that makes everything else possible.
