Its been quite over here for a little while... A lot of beers are aging for their full potential but I did just bottle an old beer that was brewed last year. It was a berliner that kind of went down the wrong road after some complications with sanitation. I guess you can call it dirty... or maybe even infected (in a good way). So it's back from the dead and with the addition of 8lbs of strawberries this baby has an awesome pinky color to it. I also tossed in some Brett C to play with all of those new highly fermentable sugars. Anyway, it's in the bottle carbing up and bulk-aging to see where it goes! Hopefully the brett will create some awesome new flavors in the future. Cheers!

I brewed a saison a few weeks ago with a few cultures from and they tore through 1.084 of wort in just a coup...

Happy Hump Day everyone! I'm thrilled to announce that we bottled some of our seasonal Imperial Stout - Papurah. A BIG stout with a LONG boil... This bad boy has a medium-heavy mouth feel with lots of roasty coffee, chocolate and dark fruit flavors. Papura is the first signer of the Stratford Confirmation in 1684 and means “A Winter Fish which comes up the Brooks”. Here's a sneak peek!
