What's our favorite winter beer? That's right: The Leafcutter. The homebrew recipe that would eventually become The Leafcutter was actually conceived at a ski lodge as the ultimate apres ski beer: light and drinkable after a hard day on the slopes, with a touch of floral pine from the Simcoe hops, and a bready finish. We settled on the Kölsch yeast after extensive trials, finding that the delicate esters formed just the right bridge between the distinctive American hop character and the more lager-like recipe construction. Grab a few cans and throw them in your backpack for the next trip to the mountains!
