The recipe for this Mediterranean Fish en Papillote (paired with Franc Blanc) is now on the blog! Works well on the campfire, on the grill, or in the oven at home. Everything steams together in parchment: the tomatoes burst, the herbs perfume the whole packet, and dinner feels both rustic and elevated at the same time. Top it with a bright, briny gremolata, pour yourself a glass, and pat yourself on the back!

One more to add to the lineup…We missed this stunner in yesterday’s post, but it deserves its moment. Another standout 2023 red with an incredible score from Jeb Dunnuck/Virginie Boone.

"The 2023 Cabernet Sauvignon Grand Klasse is a classic throwback Cab with well-integrated fruit, tannin, and oak. Refined and finessed, the texture is silky and medium to full-bodied, with a supple finish. Aged two years in 40% new and Austrian oak, this will age beautifully. Hold and drink 2033-2040."
