Garlic and Herb Crusted Spatchcock Smoked Turkey

Excuse the late post, but the start of the holiday season has been nothing short of a whirlwind for us. However, that means much quality time spent with family over meals like this succulent turkey smoked with pecan wood in my Grand Champ XD. It was first spatchcocked and dry brined overnight with
Himalayan Pink Salt, coated with olive oil, seasoned with rosemary, thyme, and sage from our garden with cracked black pepper, fresh garlic, and lemon zest added. This was definitely a crowd pleaser.
