Big Three Brewing Big Three Brewing. is a small, 3-bro owned home brewing operation in Edwardsville IL. BTB currently focused on brewing delicious mead with love and care.

When Kevin Burling, Carlos Pardo and Kyle Schafer decided there had to be more in life than just buying beer, wine and spirits so the idea of Big Three Brewing was conceived. After various debates on a name, and what we would first brew we produced our first rice wine and shortly thereafter our first mead.

After the amazing results with our first two batches of mead, we here at Big Three decided it was time to take bigger steps. After intense planning and we determined the next move and are happy to announce we have begun not just one new mead, but 4!

The Eville: A traditional mead with local Edwardsville honey
The Misery: A traditional mead with local Missouri honey
The Cinnavanilla: Sweet metheglin with cinnamon and vanilla, and honey
The Blackdragon: A rich a full bodied blackberry melomel, with plenty of honey obviously!

I may not be the best at names, but I'll let the flavors speak for themselves.

It has been a while since an update has been posted here but fear not much has been going on. Our first batch of mead was prepared and set to ferment and near the start of december was set aside to age. The mead has aged almost one month now and it already taste amazing and we here are having a hard time holding back from bottling and drinking now.

We have also begun to look into new and more creative recipies for meads and even beers.

On this crisp November morning, Big Three Brewing is ecstatic to announce that our first rice wine batch has been bottled and the start of our next project, brewing mead, has commenced.

Cheers to the near end of our first homebrew batch of wine! We are anticipating bottling sometime next week depending on when we get the flavors we want.

Can you guess what is followed by the bottling of the wine? The tasting! We have decided that we will be having 15 people over to taste and give feedback and suggestions. Some of these spots are already filled but we do have some openings so speak up if you want to be apart of this wonderful occasion!

If we have more people vying for spots than what we have available we will figure something out.

Our second tasting of Batch 1 Rice Wine was last night. The fermentation process is coming along great and the flavors of the wine are really starting to come out. In the first tasting the wine was very sweet, almost acidic, but the sweetness has mellowed out quite a bit leaving almost a sweet bread flavor with the alcohol taste starting to come through.

Big Three Brewing Company officially welcomes all family, friends, and new-found acquaintances. Thank you for joining us here at Big Three Brewing, a recent startup founded by Kevin Burling, Kyle Schafer and Carlos Pardo located in Edwardsville, IL.

At the moment, we are strictly a home-brewing operation for local tasting and entertainment. Our first batch of wine is currently in the fermentation process and is anticipated to be ready in mid-November.
