Here’s their story:
From humble beginnings growing grapes under contract for top New Zealand wine producers, husband and wife, Tom Hutchison and Fiona Harvey, embarked upon creating a wine estate based on organic winegrowing practices to showcase the inherent characteristics of their vineyard properties.

While working in a Wellington wine shop during his university days, Tom Hutchison’s love of wine took hold. After studying Viticulture at Davis University in California, he returned to New Zealand and in 1994 purchased his first Marlborough vineyard, The Corners Vineyard.

With wife Fiona Harvey, a chef by trade, they continued growing grapes under contract for several years.
In the early 2000’s Tom and Fiona purchased the historic Rock Ferry Cottage on the banks of the Wairau River and set it up as self-contained accommodation. When deciding on a name for their wine label in 2005, Rock Ferry seemed a natural choice as the site itself and its heritage ideally reflected Tom and Fiona’s approach to developing their own wine estate story.

Tom and Fiona began converting their vineyards to an organic farming principle in 2006 and today all four are fully certified. Wanting to maintain complete control over the quality of their wines, they established their own winery in 2009 at the Orchard Vineyard. Highly respected winemaker, Allan McWilliams along with Winemaker Jordan Hogg and their dedicated team, continue to produce premium, sought-after organic wines today.

Tickets are available on our website for our Introduction to Sake Tasting this Tuesday at 6:30pm

Dassai 50 and Dassai 23 are both premium Junmai Daiginjo sakes, but they differ significantly in price, rice polishing, and flavor profile.

Dassai 50 is a softer, fruit-forward daily drinker, while Dassai 23 is a highly refined, delicate, and complex luxury sake.

Rice Polishing RatioThe numbers in the name designate seimai-buai, or how much of the rice grain remains after polishing.

Dassai 50: The rice is polished down to 50%, meaning half of the original grain is milled away. This is the absolute minimum requirement to be classified as a Junmai Daiginjo.

Dassai 23: The rice is milled down to a remarkable 23%, stripping away 77% of the outer grain to leave only the pure, starchy center. This requires a much longer and more precise brewing process.

Flavor Profile
Dassai 50: Features a rich body, crisp finish, and a soft, slightly sweeter taste profile. You will detect bright notes of grape juice, cotton candy, and lemonade.

Dassai 23: Known for its pristine, elegant clarity. It is delicate, airy, and intensely aromatic with notes of white flowers, strawberry, and mineral water.

Suigei “Drunken Whale” is a highly popular, crisp, and dry Tokubetsu Junmai sake brewed by Suigei Shuzo in Kochi Prefecture, Japan. It gets its name from a regional 19th-century samurai and sake aficionado who famously drank like a whale.

Flavor Profile: Extremely clean and dry with a subtle acidity. It offers soft aromas of wildflowers and tart fruit, with herbal and fennel notes on the palate, finishing with a lingering, rich umami.Rice Polishing Ratio: 55% ABV: 15%

How to Drink It: Because of its bright acidity and dry finish, it is designed to pair perfectly with Japanese seafood, sashimi, and local Tosa-style dishes.
