New Pour and Flight Alert‼️
The second of the new flights and wow, is it a big one!

Que Sera, Sera- The Syrah Flight.
Fitting as the finale. Three 1.5oz pours of ea of these pristine aged gems in the flight- or enjoy any by the 1.5oz, 3oz or 5oz pour.

Leading the flights the is the 2010 Alain Voge Cornas Vieilles Vignes, Cornas France. Jeb said it well when he called the 2010 jaw dropping. This 99-point stunner from one of the regions' absolute best is a clinic richness, precision, and balance. An iconic wine from a highly touted vintage. Make no mistake. This is one of the benchmarks for the region (and varietal).

Followed with the 2011 Cayuse, En Chamberlin Syrah, Walla Walla Valley, Washington. Another benchmark producer, this hailing from the Walla Walla Valley (that drapes both Washington and Oregon state). Make no mistake. Cayuse set the bar for all that followed and helped define a region. The first biodymic producer in the state. The first to plant a vineyard "in the stones", Christophe set a style for which many have followed and tried to emulate. One of the states first true cult wines, this is a wine that should not be missed.

And for the grand finale, a wine that collectors and connoisseurs around the world clamor to aquire (and for good reason). This bottling-the 2009 Sine Qua Non, Syrah 'The Thrill of Stamp Collecting', Central Coast, California- is packed with energy and finesse. Pure hedonistic pleasure with a level of refinement that is rarely seen in such wines. We are truly lucky to be able to pour this cult classic for you! This is your chance to see what the hype is about.

Rarely do you get a chance to taste wines of this magnitude that have been perfectly aged. Do yourself a favor and experience these wines while you can and side-by-side.

Introducing the Sauvignon Blanc Flight (which will feature a 1.5oz pour of these three sensational Sauvignon Blancs)

Alphonse Mellot, Le Paradis, Sancerre 2021
Sancerre may be the hottest of all white wines in the world right now, but that does not mean that all Sancerre is created equal. Then there is Alphonse Mellot – King of Sancerre. In 2013, this historic estate celebrated its 500th anniversary – 19 successive generations of winegrowers in the Mellot family. Their Sauvignons have acquired a rare precision, and each parcel is well-defined. Mellot is the only three-star grower in Sancerre per the R***e du Vin de France and the only five-star grower in Sancerre per Bettane + Dessauve. Le Paradis is old vine fruit (55+ years). Concentration, tension, and balance are the hallmarks of this rare bottling.

Jules Taylor, Sauvignon Blanc 'OTQ', Marlborough, New Zealand 2022
This single vineyard - limited release bottling of "On The Quiet" from one of New Zealands top producers - is always remarkable. Wild fermentation happens in old barrels after being hand harvested. The wine sees full malolactic fermentation, which provides a creamy texture. An age-worthy Sauvignon that is an absolute must try.

It is often said that if you produce Sauvignon in Napa/Sonoma, you do so out of love and not profit. Considered one of the “Super Sauvignons,” a term coined by wine writer Karen MacNeil to describe a rare class of wines considered to be among the world’s utmost expressions of this noble grape. For me, this is always one of the benchmark California Sauvignons. A stunning collection of sites including the Spottswoode Estate, Hyde, Heitz, Stagecoach and others. Fermented in small stainless steel and French oak barrels, an amphora, and one ceramic and two concrete cuves.

Our biggest event from last year is coming back, and this year, Perlage will be even bigger and better!

- Grains de Celles Rosé, Extra Brut NV21
This comes in at 50% Pinot Noir (including 10% Coteaux Champenois) , 25% Chardonnay, and 25% Pinot Blanc. Aged entirely tirage for 30 months and bottled extra brut with a 3g/l dosage.

- No.19 (Experimental Cuvée) Brut Nature NV19
Each year Aurélien releases an experimental cuvée. The blend and origin can vary year to year, but the single vintage is always listed by the cuvée No. This comes from the 2019 vintage and is 100% Pinot Noir that saw 24 months of aging prior to secondary fermentation, which then led to another 30 months of lees aging. bottled brut nature.

Very limited, but we are excited to share these gems with you!

The Summer issue of Bartender Magazine is out and with it, the feature for the 1800 Most Awarded Ranch Water Competition.

Last month, I had the incredible honor of being selected as a national finalist in a cocktail competition sponsored by and . I was one of only three finalists flown to New York to compete on camera—and that I had the incredible honor of being selected as a national finalist in a cocktail competition sponsored by 1800 Tequila and Bartender Magazine. I was one of only three finalists flown to New York to compete on camera—and is now featured in the summer issue of Bartender Magazine! I’m beyond honored to be recognized on this level. Stay tuned—for more photos and videos! It was great to meet and compete with and as well as all three judges!

While our main focus remains on sparkling wine, I pour just as much passion and care into our cocktail program. If you haven’t explored our cocktail list yet, I highly encourage it—we have something truly special for you.
