Peruvian cuisine, considered one of the most prestigious in the world, inherited its ingenuity, its complexity and its flavor from its rich history. A lively interchange of cultures throughout the years, in which the Spanish, African, Chinese, Japanese and Italian influences feature prominently, created a rich fusion of culinary creativity. The wide variety of dishes created by Peruvian chefs were created in places where these immigrant influences came together, such as the port of Callao. From this admixture of cuisines comes the unparalleled anticucho de corazones, while tacu-tacu and carapulcra display an African inheritance. The rich and nutricious pastas where brought to Peru by Italian immmigrants, whose adaptations resulted in comfort foods such as tallerines verdes (green spaghetti, usually accompanied with beef or lamb), or tallerines rojos (more familair spaghettis with tomato sauces). Ceviche, the flagship Peruvian dish, was born when Peruvian cooks experimented with the Japanese sushi. All of this rich variety was supplemented by age-old Native American edibles uplifted to high cuisine, resulting in a banquet of dishes unmistakably our own, Peruvian, of which we are justly proud.
