We are getting married Sunday and need some time off for friends and family. Our new prep/line cook that just started a couple weeks ago quit on Saturday so we are in a tight spot.

Today we’re featuring one of our most signature dishes, the Tentáculo de Pulpo! We start by braising a whole octopus in red wine and mirepoix for about 4 hours, then we flame grill it to get that nice crispy outer edge. Served over a bed of gigante bean puree with herb oil, with a grilled green bean and fennel salad. This is one of our dishes that people keep coming back for, and even first timers coming in asking about it. You’ve got to try what many of our guests are saying is the best octopus they’ve ever had!

Happy snow day everyone! It’s going to be cold this week, it’s a perfect time to warm up with one of our Paella Salchichas! We love the rich, savory heartiness of this dish as it features our classic paella recipe, with homemade chicken stock, tons of jamón serrano, salchichon iberico, spanish chorizo, and the best of all, braised pork shoulder. When that pork shoulder cooks down and starts rendering into the rice, 👌👌 that’s magic! Come warm up with us! Happy Hour every day from 4:30-6pm!

We’re working on some new cocktails behind the bar today! They don’t have names yet, and we thought it would be fun if you guys share your ideas for names on these drinks!

The first is white peach and rosemary Grey Goose with a delicious & fresh txakolina, strawberry kefir probiotic, lemon juice and Clement orange shrubb.

The second is a gin and tonic featuring Bombay Bramble, orange blossom sparkling tonic, lime juice, and aquafaba. Let’s hear some ideas! 😃

Our seafood paella is a pescatarian bonanza featuring bay scallops, jumbo prawns, PEI mussels, and a filet of mahi mahi. It starts with our seafood stock and tons of saffron, and we cook the rice down until it has a nice crispy soccarat layer on the bottom of the pan! Come in and try what many people have told us is “the best paella in Denver.” And no, we’re not just saying that 😉

Almost all of our menu can be prepared gluten free, we have great options for fresh seafood, and some of our vegetarian dishes are even the most popular items on the menu. Come try one!
