100% Polish oak smoked wheat malt, step mashed, hopped with Polish Tomyski and Marynka hops, fermented with our house lager yeast, cold conditioned horizontally, and spunded for 2.9 volumes of carbonation.

This Saturday, we smoke! Grodziskie Day 2026!

Our beloved and two time silver medal winning Grodziskie returns this Saturday on draft and in cans to-go. We teamed up with to bring their delicious BBQ which is guaranteed to pair perfectly with our Polish oak-smoked wheat lager.

Grodziskie is the only beer style invented by Poland which features 100% oak-smoked wheat malt for a kielbasa-like aroma, Tomyski and Marynka Polish hops, and is carbonated to very high volumes for extra spritz! Commonly referred to as the “Polish Champagne.”

Over the weekend, we not only had the privilege of hosting a lot of you in our taproom (thank you for the continued patronage and support), but also made new connections outside of Illinois. Thank you to for their hospitality at their Nucleate festival in Michigan and thanks to for their hospitality at Forever Lager in Boston, MA.

Beer brings people together, which is why it is here to stay.

Contrary to popular belief, foam is beer. Our brew team adds time to every batch of beer produced specifically to enhance foam quality both visually and functionally. Sourcing reliable raw materials, activating enzymes in the mash, hopping appropriately, and spunding (natural carbonation) are among several decisions we make to ensure our foam is creamy, persistent, and efficiently drives the aromatics of the beer.

You may think this picture is of a beer poured out of a .cz tap, since that does help to create a nice dense, wet foam, but you’d be wrong. This is poured right out of a zwickel from our brite tank. The Lukr only further enhances what was already a delightful drinking experience. Beer is the only alcoholic beverage in the world that gives this type of pleasant and persistent foam naturally (no egg whites added), so honor it by drinking beer in a beer clean glass with a generous amount of head.
