What does "proof" actually mean?

You see it on every bottle of spirits, but what exactly is that number telling you?

In the United States, proof is simply twice the alcohol by volume, or ABV.

🥃 40% ABV = 80 proof
🥃 45% ABV = 90 proof
🥃 50% ABV = 100 proof

Easy enough. But here's where it gets more interesting.

When a spirit comes off the still, it's often at a much higher proof than what you'll eventually find in the bottle. Depending on the spirit and where it is in the process, water may be added to bring it down to the desired proof.

This is called proofing.

And adding water isn't just about lowering the alcohol.

Proof can have a big impact on how a spirit smells, tastes, and feels. At a higher proof, flavors can be more concentrated and intense. Adding water can change the balance of the spirit and help different aromas and flavors become easier to notice.

That's also why adding a few drops of water to a higher proof whiskey can sometimes completely change your experience of it.

So when you see 80, 90, 100 proof or higher on a bottle, you're looking at more than just how strong it is.

Proof is part of how the distiller shapes what's ultimately in your glass.
