Smoker Build Update!

The 500 gallon offset smoker on a trailer project is in full swing.
Lots & Lots of modifications and enhancements to the original.

- Upgraded Insulated Fire Box with new connection to the tank. The old connection looks like a bu****le in the video. Smaller tank will be wrapped in insulation and square box built around it.
- 2 New Doors with custom handles
- New Smoke Stack (10” elbow reduces to 8” pipe)
- Smoke stack will have a hinge to fold down for travel.
- Upgrading trailer to double axel
- moving axels back 2’ for better balance
- flip leaf spring to gain 4”+ of heigh $ ground clearance for fire box
- Entire smoker will be sandblasted inside & out (fresh start)
- 4 Classic 1950’s White Wall tires with Red & chrome rims.

“A robot can’t cook a brisket”
That’s my Anti-Traeger argument

The way this brisket was sliced is very non-traditional. But I really like this long section cut picture. It shows how the two muscles overlap with the seem fat between.

Each of these 2 muscles cooks completely differently and rendering the seem fat is another challenge.

It all has to magically finish cooking at the same time. Factor in all of the variables (weather, cooking stalls, bad smoke, temperature spikes or drops), and you're left with an epic adventure of cooking.

From a simple BBQ cookout with friends to a passion project for a way to meet people during COVID lockdowns.

The Speakeasy Underground BBQ concept has come a long way in just 1 crazy year.
From a single smoker doing only 3 racks of spare ribs to now 5 smokers cooking 150+ pounds of meat for a single sale.

Long sleepless nights sitting next to fire pits making sure temperatures were maintained all night long.
Researching and finding the best wood supplier in colorado. (yup, I found someone that delivers fresh Post Oak from Texas)
Journaling every detail of the cook. What was the cook temps? How was the weather? Denver Weather changes every 15 minutes. Adjusting cook times, temperatures, and processes on each cook. Did I wrap the meat too early, too late, should we not wrap. Even trying different size pepper flakes (16 mesh is the best). Modifying, cutting, and welding custom parts to the smokers. Reaching out to customers and hearing feedback. Any way possible to get 1% better each cook.

There are no shortcuts and every single detail matters when smoking real BBQ.

The quest for the most perfect BBQ continues.
