Today is Ian’s last shift behind the bar. Come say goodbye to this absolute legend as he hangs up his bar key and officially enters retirement!

If you’ve had a perfect pint in a pub somewhere in Dallas over the last 30+ years, there’s a good chance Ian poured it. He’s spent the last 12 years behind the bar at the Old Monk. But he was already a Dallas bar icon after a decade with our former sister bar Idle Rich Pub (RIP).

We can’t put into words how much he has meant to the Old Monk family over the years. We also can’t express how much we will miss his sharp wit, his easy smile, his everlasting love for Liverpool, and his endlessly colorful vernacular.

But we know we can’t forget him, and hope to still find him occasionally hanging out on the other side of the bar top.

So come say thank you and see you later to everyone’s favorite bartender.
