The snapper ceviche has been making some noise around here. Gulf snapper on a half shell over crushed ice, dressed in black garlic ponzu with ancho aioli, avocado, pickled red jalapeños and chile crisp. Almost too handsome to disturb. A spoon is provided.

Billy moonlights as a Derby Day destination every May, and this year is no exception. On May 2, we’re throwing open the doors at 3 p.m. for an afternoon of Hot Brown Sliders on Parker House rolls with smoked turkey, hot sauce mornay, bacon and herb roasted tomato, derby pie empanadas, poured properly, raffle baskets, and the kind of outdoor revelry that only comes around once a year. Come dressed in your best.

Easter at Billy's starts Saturday. Begin with dessert if you like. Carrot Cake Cheesecake with carrot caramel and candied walnuts makes a compelling case. The limited-time Rabbit Pot Pie with black truffle and morels is available when you’re ready to be responsible.

Rock shrimp and cucumber in a bright chile broth, with pickled fresnos, avocado crema, mint and basil. There’s a bowl of tater chips for scooping. Yours for the relishing.

Smoked white fish topped with pickled red onion, sour cream, trout roe and dill, with a bowl of Ol’ Red’s tater chips alongside. We’ve seen entire tables go quiet over this one. That’s usually a good sign.

has created a new spirit brand: Star Hill Farm Wheated Whisky. Unlike the original Marker’s Mark, it is not a bourbon; it uses wheat as its primary grain. 
 
We ran with that idea, and created a special six-course menu celebrating wheat —from bread house-baked with heirloom wheat, to hand-made Smoked Lamb Quesabirria Ravioli, to a Wagyu Shortrib Wellington Empanada. Each course will be paired with cocktails made with everything Maker’s Mark has to offer, including Star Hill Farm Wheated Whisky.

Our dining room will be transformed into a casino for the evening, with casino games, light bites, and featured cocktails plus a raffle for prizes from our friends at Beam Suntory, Dallas Bourbon Club and Community Beer Co.
Proceeds from our raffle will go towards aid and assistance for those lost and affected by the Kerr County floods.
