Join us to celebrate Nova Brewing Co.’s 7th Anniversary! 🍶🔥

When we first took over a beer brewery in 2019 with a goal of brewing sake, we had no idea how to run a brewery or a business. We started independently with our own savings and still to this day remain independent craft brewery and a family business. Our sake and beers are in over 50+ businesses nationwide while we remain a team of 4. We stayed honest, we stayed humble, and we worked hard. And this year has proved to us that, that is enough to gain trust and support as our business grows. We didn’t have any time for an event last year as we brewed non-stop all year. But we realized that hanging out, laughing, drinking and eating good food with our community recharges our energy, and get motivation to work harder.

So this year we’re celebrating how far we’ve come—and we want to celebrate with everyone who has been part of the journey.

For our 7th Anniversary, we’re excited to welcome back our longtime friends at Shinsengumi!
Shinsengumi opened its first restaurant in Gardena in 1992 and has since become an LA/OC institution, known for its authentic yakitori and Hakata-style ramen. They’ve supported Nova since our first event after the COVID lockdowns were lifted, so having them back for our anniversary makes this one especially meaningful.

🔥 AUTHENTIC BINCHOTAN YAKITORI
Shinsengumi will be bringing their yakitori grill directly to the brewery, firing up binchotan charcoal and grilling fresh yakitori to order.
For one day, we’re turning Nova into an izakaya-style brewery experience—fresh sake, charcoal-grilled yakitori, and good company.

🍶 BRAND NEW SAKE RELEASE
We’ll also be unveiling a completely new sake that our brewer has been developing for the past several months.
It’s a modern style of sake currently gaining popularity in Japan and something we’ve never explored at Nova before.
We’re keeping the details under wraps for now...

Hello Summer!

Mango Doburoku is now available at our tasting room!

MANGO DOBUROKU
100% unfiltered sake fermented with 100% real mangoes. It is now becoming our summer tradition to clean and cut mangoes in the brewery. The Doburoku base is first fermented for about 25-30 days, then we add the mangoes and ferment for a few more days, and then fermented again in the bottle to produce natural effervescence pet-nat style. The slight carbonation gives it a refreshing crisp finish to balance out the creaminess and the sweetness from the rice and the mangoes. 7.5% ABV.

STORAGE
If you’ve been taking bottles of Doburoku home, you know that our Doburoku has gotten to the point of being stable and safe to open without explosion. It took us a lot of messy trial and error (even our brewer’s kitchen has Doburoku stains on the ceiling) to get our product to this level of consistent stability without over-pasteurizing. Our tests have shown that even after a month of room temperature storage, there were no signs of re-fermentation. However, please make sure you store all our Doburoku bottles in the fridge for best taste and to prevent any yeast from re-activating.

Our summer seasonal release MANGO DOBUROKU 2026 ver. now available at our tasting room!

MANGO DOBUROKU
