We are getting into the Cinco spirit at both locations with Carnitas!!! We slow smoked and then braised pork shoulders with citrus and spices, came up with some house made lime crema and verde sauce and added cilantro and onion. This is also served on 3 corn tortillas and with a side of refried beans. These beans are our baked beans whipped up and refried and topped with cotija cheese. $13.99 while supplies last.

**Alpha Gal Update**. We need to update our standing on alpha gal syndrome. We have learned so much in the last few weeks from everyone coming in and the biggest thing we have learned is everyone is different with this syndrome. We have learned that while we do not cross contaminate during the cooking and storing process, that might just not be enough. We have learned that we also don’t have any control over what we can’t see and what was done to the meats or other foods before we received them. Processing agents are a huge factor that we didn’t know about and most of the time they are not even labeled and the manufacturer is not required to label them. Carrageenan (a processing agent that aids in retention of water) is in all kinds of things including most poultry and fish and has adverse effects on alpha gal. With these things that are out of our control we have come to the decision that we can NOT guarantee that we are 100% alpha gal friendly. We do appreciate everyone that has and is coming in with alpha gal and we will continue to smoke our poultry in a way that does not cross contaminate with beef or pork. Thank you.

Looks what’s making its triumphant return. B-O-L-O-G-N-A and Bologna Mac Sandwiches are back for the rest of the month of April. This is a blended bologna made with chicken, beef and pork. It is smoked for a couple hours to get a nice crust on it, sliced into 5 ounce portions and finished over our wood burning grill. Served on Texas toast with lettuce, tomato, onion and pickle and one side of your choice.
