"Omnia mutantur, nihil interit."
You might have noticed this phase on the bottom of each can label and on every coaster and wondered what it means. "Everything changes, but nothing is truly lost." What it represents to me is the idea of embracing the end of something, valuing the chance to have even experienced it at all, because nothing really lasts forever.Β
For the last 7 or so years, Incinerati has been my creative outlet where I've been able to brew what I want, call it what I want, use as much hops as I want, and help advance and shape the craft beer scene of the Central Valley. But the time has finally come for me to end the experiment, and ride off into the sunset in search of a new experience.Β
When these doors close for the final time, I hope that you all know that I've thoroughly enjoyed sharing all of these creations with you over the years, gushing on about them like a nerdy fanboy and thinking up what to make next. Our nights of trivia, Cards Against Humanity, Jackbox and Binho; wildly busy days with Tacos & Taps, Pedals & Pints, and pop-up BBQ and pizzas; I appreciate all of you who chose to come support my little industrial strip mall taproom out here in Clovis.
I've still got some beer left in the cold box (and some t-shirts and glassware), and so you'll still have a chance to get some before it's all gone forever. I brewed one more batch of my pride and joy, "Of Brass and Blood" Czech Lager, not entirely intending it to be the last beer I brew here, but that's what it is now and it's a fitting way for me to sign off. It's not another trendy alcoholic fruit soda, it doesn't have any sexy new hops in it or some revolutionary brewing techniques behind it. It's what I've affectionately called "beer-flavored beer," and it will appropriately be the last one around when all the others have kicked the keg for the final time.Β
I invite you all to join me for a few more rounds as I embrace the unknown and prepare to forge a new path somehow, somewhere.
