Smashburger Trivia! 🍔

Question: According to culinary lore, what unconventional object did a 1960s fry cook at Dairy Cheer in Ashland, Kentucky, famously use to flatten ground beef on the griddle, inadvertently popularizing the modern "smashburger"?

Answer: A No. 10 bean can!

The Science Behind the Lore: While thin, pressed burgers existed as far back as the Great Depression to stretch meat rations, Dairy Cheer owner Bill Culbertson is widely credited with cementing the "smashburger" technique. His cook discovered that using a heavy bean can to smash the meat maximized its contact with the hot griddle. This intense, immediate heat triggers the Maillard reaction - a chemical reaction between amino acids and reducing sugars that gives browned food its distinctive, crispy crust and rich, savory flavor.

We are opening early at 11am this Thursday and Friday for the first round of the tournament! 🚨 Need an alibi? Just tell your boss you're 'working from a cafe today' (since FROTH is right in our building, it's technically not a lie 🤫). We meant to just slap some meat on bread for St. Paddy's weekend, but things got wildly out of hand.

​Behold, today’s special:
​House-made corned beef on buttery toasted rye.
​House-fermented sauerkraut slaw (who gave us the authority to ferment things?) tossed in our signature bunker sauce.

​Mustard drizzle, plus a side of pickles and jalapeños.
​It comes with chips, but you can upgrade to fries if you're feeling extra fancy. It’s a "classic with a twist," and the twist is us actually putting serious effort into a sandwich.

​Come eat it before the culinary fame goes to our heads and we start charging you for water. 🍻
