Bordeaux in the Mid O’s was a different animal entirely. Big vintages. Bigger personalities. Wines built with structure, swagger, and enough dark fruit to survive decades and derail an otherwise responsible Wednesday evening.

This week’s Vintage Wednesday heads straight into that era with a lineup of Right and Left Bank bottles that range from polished and aristocratic to dark, brooding, and faintly dangerous. There are very few combinations in life that achieve true perfection. Martini and frites is one of them.

Something about an ice-cold martini beside a pile of hot salty fries makes the entire world feel briefly manageable. The gin cuts through the grease. The fries soften the blow of the martini you absolutely did not need before dinner. The olives stare back at you with quiet judgment while you continue anyway.

It is elegant in theory and deeply irresponsible in practice, which is exactly what makes it iconic.

We’ve become deviled egg crazy at Lush, which is how we ended up creating something both deeply unnecessary and completely essential: Deviled Egg Spread.

Because the traditional deviled egg, while noble, has always been a high-risk operation. One wrong bite and suddenly you’re wearing paprika and yolk paste like a warning to others. So we civilized the experience. Sort of.

Our new Deviled Egg Spread is lush, decadent, and aggressively snackable. Topped with trout roe for little bursts of salty defiance and served with dark crispy chips built to withstand the chaos. It’s rich, sharable, and almost elegant if you squint hard enough.

Vintage Wednesday heads back to early-2000s California this week, which means an almost concerning level of confidence in bottle form. Tiny production wines. Massive personalities. Winemakers treating restraint as a personal insult. It was an era of excess, experimentation, and bottles that somehow tasted both dangerously polished and slightly feral at the same time.

This week’s lineup dives straight into that glorious chaos with wines that feel more like cult artifacts than proper dinner companions. Big Syrah energy, outlaw rosé, enough smoke, spice, and structure to derail an otherwise responsible Wednesday evening.
