Joe’s Wine Cellar has been an integral part of the Wicker Park community for almost a decade and has come to a turning point inviting in new ownership. Seth Wilson and Craig Perman have been in the wine industry for the entirety of their working lives and have made it not just a profession but a lifelong passion, and are invested in not just finding the best selections within the bottles but to al

so have a deep-seated relationship with the story behind the bottles. As the space begins to change bit by bit, it will always remain what at core it is expected to be: an incredible retail store carrying multiple wines by the half and full glass coming from the WineStation© for our guests to experience and learn about as it remains in constant rotation showcasing some of the most spectacular wines throughout the world. As we retain the core philosophy of Joe’s, come 2022 many physiological changes will occur that we’re very excited to bring to you and will keep you posted what these are the closer we get to the reconceptualization. Le Midi is the term the French commonly use to refer to the southern region of France bounded by Spain and the Pyrénées to the south, and by Italy and the Alps to the northeast.

Over the past two decades, we have had the good fortune of traveling extensively throughout Europe, visiting wineries, exploring restaurants, and seeking out the best local wine shops.

With Le Midi as our inspiration, we set out to create a convivial gathering spot for sampling the flavors of places such as France, Italy, Spain, and other European countries.

At our core, we are a wine shop, a place to explore some of the top wines of Europe and beyond. We’ve worked tirelessly to source the wines we feature, tasting thousands to narrow them down to a rotating selection of 250 labels. We also feature a small, exciting mix of craft spirits, beer, and sake.

Le Midi will bring to Chicago the Mediterranean tradition of l’heure de l’apéro: the time before or after dinner to sit back and relax with a glass of wine alongside a few choice bites meant to enhance your experience.

There are two reasons why we think you will fall in love with this new concept:

Le Midi will be one of Chicago’s most unique wine stores. Our selections will be inspired by the great wine countries of Europe: France, Italy, Spain, Portugal, Germany, Austria and Greece. Every bottle will always be of supreme quality and sourced meticulously to appease every palate.

Le Midi also brings a Mediterranean tradition to Chicago: l’heure d’apéro, the time before dinner… or after, for a glass of wine and a few selected bites. We will be your place to come each and every week and try our ever changing wines by the glass, and pair with a small bite inspired by the the culinary giants of Europe.

June Offerings

Tier 1: $25 and Under

Domaine de L’Oiselet, Vacqueyras, 2017

As we start approaching more BBQ-worthy days in June, I thought it was necessary to provide a pairing that will rock your charcoal grilling socks off. The Rhône Valley always inspires images of powerful savory Syrah from the north and robust fruity Grenache-driven blends from the south, and there is absolutely nothing better to pair with grilled foods than Grenache!

This bottle is very unique as it’s not your typical Grenache/Syrah/Mourvedre blend that comes out of the Rhône but rather a Grenache driven style blending in Carignan and Cinsault imparting more red fruited, baking spice, and herbaceous characteristics. This five-year-old wine is starting to showcase more of a floral, fig-driven nose with a bold, spicy, and meaty palate built to pair with all kinds of grilled goodies.

Vacqueyras is not a wine region many American consumers are as familiar with as the larger Côtes-du-Rhône and the famously lauded region of Châteauneuf-du-Pape, so this is where this wine really starts to stand out. If you ever want to bump up the quality of your Rhône blends but don’t want to break the bank with Châteauneufs, the best regions to seek out are Vacqueyras and Gigondas. A funny thing about these appellations is that the French haven’t decided which pronunciation they prefer, so you will find some in the south who will pronounce the hard “s” sound at the end, and others in the north who pronounce it with a silent “s”. After spending a little time in the region and hearing their dialect, I have opted for the hard “s”, but either way works!

At the base of the Dentelles de Montmirail mountain range L’Oiselet’s certified organic vineyards are farmed mostly manually by the 5th generation winemaker Yannick Pelletier and his family. This is one of only two wines they produce which changes yearly depending which ratio of varietals are incorporated that vintage. 2017 was a tougher vintage due to an unexpected cold snap that reduced yields drastically, but still created some powerful and age worthy wines, and this five year old bottle is in a very nice place right now. For under $20 bottle, this wine packs much more of a punch than its price reflects and you can’t beat the pairing. I recommend serving it a bit chilled!

Quinta das Bágeiras “Branco Reserva”, Bairrada, 2018

I admit that before I got into a partnership with Craig Perman to open Le Midi (coming soon!), I did not have a ton of exposure to Portuguese wines and didn’t think too often about them outside of the sticky fortified wines we all know and love. As I started to delve more into the dry table wines with Craig, I realized I had been greatly remiss by not exploring these wines sooner! I am now an avid proponent for this country’s various regions producing some of the greatest and most value-driven wines of all styles.

The Bairrada appellation is one of Portugal’s greatest DOCs for wine production as it’s just a hop, skip, and a jump to the Atlantic Ocean directly to its west, alongside having limestone-rich clay soils (barro is Portuguese for clay) which vines prosper in. Although Bairrada is more known for its sparkling wines and tannic red wines, white wines also perform very well in Bairrada with the moderate climate assisted by the Atlantic breezes giving way to exquisite mineral-driven wines built for seafood pairings.

Quinta das Bágeiras was founded in 1989 by Mário Sérgio Nuno Alves who now works alongside his son Federico producing wines running the gamut from sparkling, white, reds, and rosé. As fantastic as the normale white wine drinks, the Reserva leaps out of the glass with even greater complexity making this more of a contemplative style than an everyday easy drinker. The stainless fermented Bical and Maria Gomes grapes show intense aromas of orange blossom, mint, and herbs while the palate is full of saline, crushed rock, and white pepper.

Mario Sérgio has implemented very rigid winemaking practices: hand-harvesting, natural fermentations, strict sorting of the best fruit which are then decanted into small lagares before blending which help make these quality wines stand out. These wines inarguably contributed to putting Bairrada on the map for world-class wine production.

If you haven’t yet had a table wine from Portugal, then I implore you to change that immediately with this bottle and I guarantee you will quickly become a zealot for these wines too! Make sure you grab some fresh white fish with lemon to pair beside this one and take those flavors into the stratosphere.

Tier 2: $50 and under

Coume del Mas “Folio Edition Spéciale”, Collioure, 2018

For those who are yearning to be relaxing on the sandy beaches of southern France but can’t make it there physically, you’ll be happy to know the Mediterranean is coming to you! If you have never heard of the medieval town of Collioure which rests on the precipice of Spain and France, I ask you to just Google it and take in a deep imaginary ocean-filled breath and transport yourself to some of the most beautiful Catalan-inspired architectural views of the Mediterranean on Earth (and then open this bottle of wine and keep yourself there just a bit longer.)

The lauded biodynamic vignerons Philippe and Nathalie Gard created Coume del Mas in the Languedoc-Roussillon region in 2001. Their vineyards rest on the steep slopes around Banyuls sur Mer where the mountains dive right into the sea, and this white wine is year after year considered to be one of the best from the region. With harsh climactic conditions and vast rocky drops, grapes must be hand harvested as machine harvesting is simply not viable. This single vineyard Grenache Gris was grown on various poor black slate soils, wild yeast fermented in barrel, and rested on its fine lees in a mix of new and old demi-muids for 12 months. For Grand Cru White Burgundy lovers, I recommend trying this one on for size and pairing with grilled turbot with lemon, or fresh porcinis sautéed with truffles.

The ”Edition Spéciale” of Folio is the hand selected best fruit that goes into this top cuvée made only in great vintages and spending twice as long in oak as its normal “Folio” counterpart. On an average year, only 3,000 bottles are made so this is an extremely hard wine to find and we are excited to have gotten the last bottles in Illinois to offer for this month’s wine club! This is not a wine for the faint-hearted as it packs a massive body full of saline, lemongrass, papaya and finishing off with what reminds me of creamy panna cotta and pink sea salt. These multiple layers of flavors and aromas will make you stop in your tracks and really ponder what just happened to all of your senses. We hope you enjoy the ride!

Domaine Breyton, Crôzes-Hermitage, 2019

So since Tier 1 got a little Southern Rhône action this month, I thought I’d put a great Northern Rhône on Tier 2 for good measure. In the same Summer BBQ pairing vein, if you’re not having Southern Rhône Grenache blends, then you must have Northern Rhône Syrah! However, whereas the Tier 1 Vacqueyras is laden with ripe fruit and big bodied meatiness, this bottle is all about introversion and nuance.

The Breyton Crôzes-Hermitage is a classic and outstanding example of what Syrah should taste like from this region. In my humble opinion, it is closer in quality to Syrahs from the famous hill of Hermitage rather than its lighter styled counterpart in Crôzes (but still not costing you the astoundingly high prices of an actual Hermitage!)

Jacques Breyton farms only a few hectares of these 70-year-old vines on dramatically steep granite-laden vineyards with the intension to represent Syrah as perfectly as possible. Certified biodynamic by Demeter, using all stainless with no oak treatment (which is a rare method in this region,) and using only native yeasts, his wines are a true expression of terroir allowing you to taste the place where the fruit is grown. The unique technique of fermenting and aging in stainless steel also helps make this style of Syrah much more warm-weather friendly.

To be a quintessential representation of Northern Rhône Syrah like Breyton aspires to achieve, there are indicative things to look for in the glass: violets, black pepper, cured meat, and black olives. If you ever blind taste a wine and get all of those in spades, you can pretty much guarantee it’s from this area of the world, or at least made in this style. This wine is precisely all of that. As soon as you take in the first breath of its aromas, you are immediately transported here, and you will then also see why this is such a great wine for grilled game being able to accentuate all of the charred savory and spicy flavors with perfection.

This event is open to all, so regardless of your orientation you are more than welcome to join while we have night filled with all of the colors various grapes have to offer (and maybe some Madonna and Whitney peppered in for good measure.)

The French word midi has many definitions: it can mean the middle, or midday, and it also refers to the geographical boundary that separates France, Italy, and Spain through the Alps and Pyrenees. This area of the world is where Craig and I primarily focused our attention when we decided to come up with this new business. We have respectively spent a lot of time in the south of France, and northern Italy and Spain, so we wanted to impart that culture onto Chicago! Considering this is one of the very few Napa wines we've introduced in to our primarily European inventory, that's pretty serendepitous. Cathy Corison is an iconic Napa Valley winemaker creating some of the most elegant representations of Cabernet out there, and it's a pleasure to be able to have one of her wines on our wall. It was an equal pleasure meeting her charming daughter and helping welcome her to Chicago!

Tier 1: $25 and Under

Domaine Félines Jourdan, Picpoul de Pinet, Languedoc-Roussillon, 2019

Summer is right around the corner and these two wines are a perfect match for the (hopefully) upcoming warm weather. For the white wine offering, if you ever decide to visit the French Riviéra, head just south from the Montpellier airport towards the Mediterranean Sea and you’ll find the inland expanse of water known as the Bassin-de-Thau. Once there you will likely come across this gem of a wine that doesn’t get nearly enough attention considering it’s absolutely delicious, low ABV, always affordable, and just fun to say out loud after having a few glasses of it.

Picpoul is the varietal of this lip-smacking wine and has its best descriptor hidden within its name: translated from French, picpoul means “stings the lip”, and once you try this wine, you will see why it’s the most fitting name for it. Domaine Félines Jourdan is regarded as one of the best producers from this region and takes this highly fashionable varietal very seriously. Most Picpoul is made by a few co-operatives who make very approachable easy-drinking wines but that don’t have nearly the kind of energy and complexity as what comes from Féline Jourdan with its limestone rich and pebbled soils alongside superior artisanal craftsmanship.

After having a few years in bottle to tame its verve and evolve, the wine boasts a fantastic nose of white florals and peppery spice with just a hint of gun flint and fresh fennel. The next aromatic wave is laden with freshly chucked oysters, lemon rind, wet stone, and a gentle waft of honeysuckle. This wine is a no-brainer for pairing with east coast oysters, langoustines with drawn butter, grilled white fish, and spring asparagus (which is no easy vegetable to pair with, let me tell you.). For those who prefer not to pair sake with their sushi should also highly consider this selection!

J. Mourat “Collection”, Fiefs Vendéens, Valle de Loire, 2020

Now that I have piqued your interest with Picpoul *giggles*, let’s take you to another maritime influenced wine coming from the Atlantic Ocean on the far western reaches of the Loire Valley in north central France. Just south of the famous white wine region of Muscadet rests the lesser-known and recently minted appellation of Fiefs Vendéens that is mostly known for scrumptious direct-press rosés and unique red blends focusing on Négrette, Gamay and Pinot Noir.

The Mourat family has a rich history starting out as salt makers in the 19th century then eventually evolving to winemakers in the 1970s. Since 2000 the property is owned and operated by the second-generation winemaker Jérémie Mourat who has moved the winery over to certified organic farming and is fastidious about honoring the traditional aspects of this region’s wines to raise its international recognition.

Sitting just 20 km from the Atlantic Ocean, the climactic conditions are strongly dictated by its influences: cold and wet winters; cool and cloudy springs; warm and humid summers. The 15–30 year-old vines grown on their volcanic and schist soils help impart strong mineral nuances coupled with the cool salty air coming in from the coast. The result for the Collection of Pinot Noir, Gamay, and Cabernet Franc is a great case study in blending showing an elegant balance of crushed raspberry and tart cherry with a subtle earthiness lead by a mixed bouquet of florals and a peppery finish.
This is a crushable red wine that’s perfect to serve a bit chilled for a warm patio day alongside some grilled meats and roasted vegetables, or even roasted salmon if you want to go the fish route!

Tier 2: $50 and Under

Avinyó, Brut Rosé Reserva, Cava, 2018

For tier two wines this month, I want to focus on Pinot Noir. As we approach warmer weather, there’s nothing better than to crack open a wine made from this highly charismatic grape. As we move from the hibernating warming wines of winter, it’s time to enliven the senses and pay tribute to this noble Burgundy varietal. Alas, neither of these wines come from France, but don’t fret - they’re both of the highest quality from their respective regions and show just how exquisitely this grape fares throughout the world.

To start, we’ll head to Cava and showcase a sparkling Reserva rosé made from 100% Pinot Noir which is a bit of a curveball as this region more typically focuses on its indigenous varietals Macabeu, Xarel-lo, and Parellada when producing their sparkling. Occasionally, however, they’ll borrow this varietal from its northern neighbor and prove just how well it shows in Spain. In fact, in 1980 Avinyó was one of the very first wineries to introduce Pinot Noir to Cava simply to experiment with, and lo-and-behold, history was made and Pinot Noir was accepted in with open arms.

Now don’t confuse Avinyó with much of the bulk sparkling wines that can historically come from Cava as this is an artisanal family-owned winery focused on its organically farmed estate vineyards (which is very rare in this region) along with state-of-the-art facilities. The Reserva Rosado is all direct-pressed fruit from the Finca la Fessina vineyard which is considered the winery’s best single site on property for the success of Pinot Noir, and we cannot disagree after experiencing this bottle.

Spending 18 months on the lees, the Reserva Rosé is full of power and finesse simultaneously. It’s got all of the things a well-made sparkling wine should have: fruit, herbs, toastiness, minerality, and above all – tons of personality. Do not miss out on this bottle as it’s one for the books!

Peregrine, Central Otago, 2016

Back in 2018 I decided it was time to get the hell out of Dodge and explore the world of wine in a different capacity than Sommelier and Wine Director. I wanted to immerse myself in the soil and the vines and really get to see what all the fuss was about with these bottles I had been selling tableside donned in uncomfortable suits and bowties for so many years. Kind of akin to the movie Coming to America, I knew I wanted to go to another country to find love, and the dart happened to land on New Zealand! (Full disclosure: I knew wanted to work a harvest, but also wanted to escape the abysmal Chicago winter and the best way to do that is to turn the world topsy turvy and head to the southern hemisphere where its harvests take place during our winters. Yay logic!)

I arrived in Auckland in February of 2019, bought a 1998 green Station Dragon called “Joy” for $1800, then for three months chased the harvest from Waiheke Island in the north all the way down to Central Otago in the South Island where I was lucky enough to work the end of the harvest at Peregrine Wines. It was one of the most incredible experiences of my life, and I cannot express how much in love I am with this wine for the second-tier bottle.

Peregrine is run by the wonderful McLachlan family (Lindsey and Jude and their sons Fraser and Blair) with whom I was privileged to stay and work alongside for a few weeks. This was the first experience that truly opened my eyes to the benefits of organic/sustainable farming practices. Jude even manages her own bee apiary on the farm which produces some of the most magnificent honey I have ever tasted! On the vineyard sites at their Bendigo estate, you will find plenty of free roaming sheep, ducks, rabbits and various flora and natural life that contribute to the closed system showcasing the true terroir of the land in the wines. All fruit is hand harvested and meticulously sorted from plot to plot and then turned into magical juice by their winemaker Nadine.

Though New Zealand may have gotten on the wine map for their bright and aromatic Marlborough Sauvignon Blancs, for me it was more of the red grapes like Pinot Noir and Syrah from Central Otago that helped etch in my mind the true potential for world class wines from these little islands. I was able to try the 2016 releases while staying at Peregrine and was blown away with the quality. It’s a vintage that was considered perfect in Central Otago and gives clearance to allow the wines to age gracefully. Now that this bottle is heading into its sixth year, it is simply magnificent: full concentration of black cherry and rhubarb, fennel, dried tarragon and basil and this beautiful bouquet of sweet earthen clay and rose incense. This is a stunning wine right now but has many more years of potential evolution to blossom if you want to consider cellaring a few bottles.

Tier 1: $25 and Under

Viña Mein “Blanco”, Treixadura Blend, Ribeiro, 2016

Galicia is one of Spain’s most important wine regions. Tucked away in the Northwest corner of the country, it is a culinary and wine paradise. Some of the best fish in the world comes from Galicia, and to compliment it, white wine is a classic match. While Albariño grown in the coastal wine regions is the most famous type of wine from Galicia, historically the vineyards of the Ribeiro region are equally prized.
The Mein vineyard in the village of San Clodio appears in Galician history books as one of the first inhabited settlements around the San Clodio monastery, and as early as 1158 its Abbot mentioned the outstanding quality of the grapes grown there. The 2016 Viña Mein Branco is the flagship bottling from this producer. A blend consisting primarily of Treixadura with smaller amounts of Godello, Loureiro, Torrontès, Albariño, and Lado and co-fermented in stainless steel, and rested on its fine lees for 10 months prior to bottling.
Viña Mein was recently purchased by the owners of the legendary Pago de Carraovejas winery from Ribera del Duero. This is undoubtedly one of the last bottles you will find produced by its original owner Javier Alèn. His legacy of putting Mein on the viticultural map and catapulting the perception of Galician wines in the modern world will not be forgotten. This is a great opportunity to try a perfectly mature example of Ribeiro from one of the legendary producers of Galicia.
With such a mélange of varietals and unique soil types, this wine is the epitome of layered complexity: the nose leads with ripe white fruits, lanolin, fennel, and this cool moss-like quality, whereas the palate exhibits yellow peach, grass, and white floral accents with an elongated mineral driven finish. It’s a contemplative wine that can be both a crowd pleaser and a conversation starter.

Château Les Pins “Petits Pins Rouge”, Rhône Blend, Côtes du Roussillon Villages, 2018

I was lucky enough to be able to visit this neck of the woods a few years back when I got invited by a dear friend to be a plus-one to this stunning fairytale castle wedding (I make a great wedding date, btw). While there I got to try some phenomenal wine whose low prices left me in a constant state of giddy guffaw – for better or worse! Since then I am always seeking out the best of the best from the large Languedoc-Roussillon region to showcase remarkably made wines for a more economically conservative customer base.
Located in the village of Baixas in Roussillon that hugs the Mediterranean Ocean and sits just north of the Spanish border, the beautiful mid 19th century Catalan-inspired castle of Château Les Pins slumbers amidst its steeply terraced and winding vineyards. “Petits Pins” is their entry-level wine whose younger-vined fruit didn’t make their top cuvée built for longer ageing yet is a great wine to enjoy immediately while understanding the potential for their 1st label. Les pins translates to pine trees which encompass the château’s enclosed vineyards and do indeed help manifest this lovely herb-like quality in the fruit which is complemented by the scrubland garrigues that runs rampant throughout this area. This coupled with the top-quality soil of these vineyards known as haute-terraces (“high terraced” comprised of pebbles and clay) really set these wines apart qualitatively.
Spending 12 months in French cask then matured in bottle in air-conditioned cellars, this big-bodied wine is a phenomenal example of getting the bang for your buck. Being a Grenache dominant blend, "Petits Pins" packs a lush, red-fruited punch right from the start lifted by the more savory Syrah and Mourvèdre and accentuated neatly with the inherent herbaceousness that screams for a lamb stew pairing.
Chicago only received 16 cases of this wine and we are so happy to have gotten some, but sadly once it’s gone there’s not much more we can do, so jump on this rare opportunity to enjoy this selection!

Tier 2: $50 and Under

Domaine Cordier “Vielles Vignes”, Viré Clessé, Chardonnay, 2020

I am often asked what my favorite varietal in the world is, and without flinching I will say “Chardonnay.” This at times creates a little eyebrow twitch with many, and sometimes a downright look of giggle-worthy appall. I have eventually numbed to this response and ready myself for a charged dialogue about the inevitable “too oaky, buttery” stance, but I am always locked and loaded with the best counterargument available.

Unbeknownst to many, but very knownst to those who adore this varietal, Chardonnay sings most sublimely in this historic wine region and if you have not yet tried one, I will be the first to say you are remiss (in my humble opinion) in having one of the most riveting wine experiences. Very few moments in my wine history have many brought the caliber of catharsis I experience when amongst Burgundy’s greatest white wines. I quiver even at the thought.

Sadly, as the climate changes, pandemics occur, and international politics confound, Burgundy bottlings have become harder and harder to gain access to and with that comes mind-boggling prices in tow. Domaine Cordier’s Viré Clessé wines, located in Burgundy’s far southern reaches in the Mâconnais, have proven to be an incredible find in a dearth of supply. Farming hand-harvested 60-year-old vines biodynamically on a mere one hectare of a clay and limestone-laden land, Christophe Cordier is a star in what was once considered a lesser valued viticultural appellation within the region. Christophe is amongst some of the most lauded winemakers in Viré Clessé making its quality known worldwide while allowing prices to stay approachable.

Spending 12 months in the highest quality French oak that is coopered on site, this old vine Chardonnay shows stunningly ripe orchard fruit, apple blossom, honeysuckle, and acacia with a captivating stream of acidity that lifts all the flavors into another realm. Forget having to spend an arm and a leg to access incredible white Burgundies and relish in this great bottle.

Pax, North Coast, Syrah, 2019

We’re not sure If it was just because Pax Mahle was given the name Pax at birth that his wines ended up embodying the ethos of his name, but to say this whole-cluster fermented wine packs quite the punch is honestly the most astute way of describing it.

Pax has had a long history in the California wine world having started making wines for Donelan Family Wines, then decided to change direction completely with a focus on more restrained French-styled bottlings with Wind Gap, and finally landing on the eponymous Pax Wines in 2000 focusing on cool climate Syrah and Pinot Noir. Since that moment on, Pax has skyrocketed in recognition for his highly lauded approach to the more modern California winemaking culture that veers away from the saturated, highly-oaked styles California had been known for.

Using more of a holistic approach focusing on organic and biodynamic farming methods, Pax wines are indicative of focusing on terroir and paying utmost respect for the fruit shining on its own with as little intervention as possible. It is one of the few California wineries that still treads grapes by foot! His North Coast bottling sources fruit from a few of Pax’s favorite vineyards (Castelli-Knight Ranch/Alder Springs/Nellessen/Griffins Lair) that didn’t make it to his top cuvées, but still of the highest quality and absolutely worthy of producing great price-friendly wines to be consumed more in their youth (however can still age for many years in cellar).

If you are a fan of Northern Rhône Syrahs, then you must try this and see just how much potential California has in making wines that could easily rival its French counterpart. Pax’s wines are always a curveball for me in blind tastings as I am never able to place them in California due to their low octane yet high flavor concentration, and ability to amplify more aspects outside of pure fruit: think black pepper, cured meat, and black olive tapenade. Pax’s Syrahs are a must for a warm-weather BBQ, and the 2019 North Coast is shoe-in!

(For those whose interests have been piqued, we have also were able to get our hands on Pax’s highly limited 2019 “Sonoma Hillsides” Syrah ($51.99) that has formed a substantial following and is inarguably one of the best representations of cool-climate Northern California Syrah wines in the market. It has been so well received that in 2016 Antonio Galloni rated it a perfect 100 points which firmly placed it on the must-try wine map indefinitely. Come into the store to grab a bottle before they’re gone!)
