What comes after a rainy, gray day? A rainbow trout, of course. Today we’re loving the grilled rainbow trout with herby salmoriglio and almonds. Our recommendation? Pair with Matthiasson’s clean Linda Vista Vineyard California chardonnay. Notes of butterscotch and green shiso complement the trout’s toasted almonds and herbs 🌿

This past week, was honored to be named a semifinalist in the Outstanding Hospitality category by the . Restaurants are a team sport—but is the captain of our ship.

Recently named Director of Operations for our restaurants, Hannah has been a true catalyst for the growth of our service and hospitality. Originally from Houston, she brings intention, leadership and care to everything she touches—helping shape the kind of hospitality Chicago is proud of.
