Hop Butcher for the World In his poem "Chicago," Carl Sandburg first refers to this great city as "Hog Butcher For the World."

And while the literal meaning behind that moniker has faded since the mid-twentieth century closing of the Union Stock Yards, it anchors and inspires our ethos in three meaningful ways:

For starters, we love hops. The variety of ways they can be used in brewing and the range of flavors and aromas that they bring to beer are vast and areas in which we enjoy experimenting heavily. No surprise then that the word "hop" appears in our name and that the majority of our recipes begin with a specific variety or intuitive blend of hops in mind. How we are inspired by the "Butcher" portion of our namesake is thankfully less bloody than the history behind it, but there are a lot of butcher-esque traits that we do draw inspiration from. All of the ones we grew up around were approachable, dependable and visibly and vocally passionate about their craft. They'd take the time to get to know you, get technical when necessary and if you wanted it, help you find something or make a recommendation. That's who we aim to be, except with hops, yeast, water and grain in a brewery instead of a butcher shop and a meat-filled counter. Finally, at some point, you'll refer to us simply as "Hop Butcher" (and we're cool with that), but the "For The World" part is an important and meaningful element of our name. It inspires the ingredients we use and the personality behind the beers we brew: unique enough for the beer geeks, approachable enough for the newcomers. It guides who we work with and where our cans and kegs are distributed...and where they might someday be distributed.

Only at Lincoln ⚡️a mind striking, mind boggling, mind dancing, throat liquifying pale ale. Hopped with a bolt of Simcoe before being completely drenched with New Zealand Cascade and American Cascade. Dry like a pale. Visually crushable and fluidly gulpable. It’s programmed for a thrashing session of 5.5% hoppy b**rs all night long. Destroy your four packs this Friday.

Pale Brains is available in growlers and cans from the shop. Pouring in all sizes in the taproom especially the fabled 20 oz pour. A b**r like Pale Brains reminds me of popping into the **r shop on Fridays. Grabbing howlers and the latest releases, double parking, shooting the s**t, and jetting up the block for a pizza from Lou’s. A symbol of perfection, ladies and gentlemen.

Tavern King - 7.5% double India pale ale hopped with Citra & Vic Secret. Incredible color. Orange and pineapple pine aromatics. Just the sight gets pizza deliveries in motion. If you are looking for a Hop Butcher Mt. Rushmore b**r, look no further.

Triple Unwind Your Mind - 10.5% Triple India Pale Ale hopped with the dopest Mosaic, from the source and booming El Dorado from , and maybe the best crop of Motueka in all the years we picked it. The beloved Unwind Your Mind gets tripled and you get taken to the sweet clouds of bliss. Incredible batch.

Deepen - 7.25% West Coast India Pale Ale hopped with more Motueka, hand selected Simcoe, & Nectaron. Two years ago, we were drinking at the firehose of the new west coast fountain of youth with a box of Kohatu in hand. Pale and grippy was the goal with a girth of saturated lupulin liquid. Hard pour this into your glass and make quick work of your first pint. Go in for round two and savor a little more.

Thursday deliveries are complete for the day. We’ll be back out tomorrow in the burbs a little further out from the city as well as some city spots. You can also pick these up in four packs from our retail shop and on draft in the taproom.
