EL MONARCA | EL CAMINO ENTRE DOS MUNDOS

The invisible path between two worlds.

The third course of El Monarca, Chef Geno Bahena’s Día de los Mu***os tasting menu, features Nogaditas, inspired by the connection between those who came before us and the generations who carry their traditions forward. The white nogada evokes the spirit and purity of those who have passed, while the surrounding ingredients represent the earth, life, and the memories that unite us.

Four courses. Four moments. One journey.

Join us October 30 at 7 PM, October 31 at 7 PM, or November 1 at 6 PM for El Monarca, a Día de los Mu***os journey through Mexican heritage, memory, and tradition.

EL ALTAR — Pato en Mole Negro

Some flavors carry the memory of those who came before us.

The second course of EL MONARCA, Chef Geno Bahena’s Día de los Mu***os tasting menu, is an homage to memory, family, and the traditions that keep our loved ones close.

Pato en Mole Negro celebrates the depth of mole negro—a complex interplay of chiles, spice, sweetness, bitterness, toasted notes, time, and patience. Inspired by the altar, where photographs, candles, flowers, and favorite foods bring memories to life, this course honors the stories, teachings, and love that remain with us.

You are gone from our sight, but you are never gone from our hearts.

Experience EL MONARCA, a four-course Día de los Mu***os journey at Manchamanteles, guided by Chef Geno Bahena.

MADRE | The Beginning of EL MONARCA

“Cooking is an act of giving.” — Chef Geno Bahena

The journey begins with Madre, the first course of EL MONARCA, our Día de los Mu***os tasting experience.

A tamalito de mole rojo, Madre pays tribute to the mothers and grandmothers whose hands, recipes, and traditions shape generations of Mexican cuisine. Wrapped in corn, it carries the essence of home: maíz, chile, masa, and memory.

For Chef Geno Bahena, this course honors the women who taught us that cooking is more than preparing food. It is a way to love, to remember, and to give.

The first of four chapters in a culinary journey inspired by Mexico, family, migration, and the enduring connection between generations.

EL MONARCA | DÍA DE LOS MU***OS AT MANCHAMANTELES

A journey through memory, tradition, and the path between two worlds.

For Día de los Mu***os, Chef Geno Bahena presents El Monarca, a four-course tasting inspired by the monarch butterfly—a symbol of migration, family, remembrance, and the traditions that connect generations.

Rooted in Mexican heritage, Día de los Mu***os is a time to honor those who came before us. Through the ofrenda, marigolds, and cherished offerings, we celebrate the enduring bond between the living and those we carry in our hearts.

Each course of El Monarca tells a chapter of this journey, from the first offering to the path between two worlds, culminating in a celebration of remembrance.

THE AZTEC GRILL.

At Manchamanteles, our cooking begins with the fire.

Our Aztec Grill draws from the open-fire cooking traditions of Mesoamerica, where wood, heat, and time have long been essential to the way food is prepared.

We cook over mesquite wood, allowing the fire to shape the flavor of each ingredient — creating the char, smoke, and depth that define our cocina de humo.

It is a tradition we continue through our own kitchen in Bucktown, using the grill as both a cooking method and a connection to Mexico’s culinary history.

Join us at Manchamanteles and experience our cooking over fire.

Open Wednesday–Sunday for brunch, lunch, and dinner.

Reservations recommended.
