👇 Why you rest a steak 👇
It’s all about the juice...
When you cook a steak the heat drives those lovely juices to the centre and tightens the fibres.
Cut it too soon and those juices spill out onto the board. Not good.
Resting lets the heat settle and the fibres relax, so those delicious juices can spread back through the meat – where they belong.
A rested steak is a better steak. And no mistake.
