While my trip and the journey are not over yet, I did drop off the last beers I brought over the sea. and are amazing breweries here in New Zealand and each were really fun stops! I wish I had been able to bring more to share, but a can each of and will have to do. A huge thanks to both these breweries for chatting with us and talking about all their beers and can art. We have gotten to visit so many amazing breweries and brewpubs throughout Australia and New Zealand, yet I wish we could have gone to even more and shared cans with them all. I did give out lots of can labels in my travels though, so you may get a glimpse of Mystic when you least expect it!

may be closed down, but I saw the need to bring some beer to the land down under! I'm sharing some of our last brews with some great breweries down here in the Australian and New Zealand craft beer scene. While we all miss the beer and the art from the last eight years, at least we can still share it with friends and the world.

The Final Release: Ventus

While “Think About it, Sam” was the final beer we brewed the final beer we will be releasing is Ventus. Ventus may be the beer that best represents the spirit of our brewery and is perhaps our greatest accomplishment. It is a 3 year blended lambic-style beer. It’s aged and matured for three years in french oak barrels using a mixed fermentation culture we developed ourselves from a Belgain source. The various barrels are selected and blended with the goal of achieving a vivid, layered flavor profile with balanced acidity and delightful aromatics.

For this final offering, our former head brewer, Charlie Cummings, (who brewed the very beer into these barrels years ago) came back from his current gig at to help blend the beer for the 2019 edition. We bottled it and refermented in the bottle over months as with previous Ventus (aka Flor Ventus). This one is three months in the bottle and ready to drink but will continue to improve if cellared for another 9 months. 2019 Ventus was bottled in both green and amber bottles. Green was used to capture floral aromatics that arise from light reactions in a wild ale.

Final can release of Mystic!

"Think about it Sam" is a fitting send off double IPA. We went into the walk-in and found all hops we love and threw them in. The result is this juicy, hoppy, hazy beautiful creation with 15lbs of hops per barrel. %8.8 abv.

$23 per 4 pack. We are releasing this over the next two days with 40 cases of cans available today, and 40 more tomorrow. Limit of four 4 packs per person.

This beer will also be available on draft starting at open today. Same as cans, we will have five kegs available for each day!

All of us at Mystic want to thank everyone for the outpouring of support and well wishes we have received over the past few weeks. At this point, we need to share with you the news that our Chelsea tap room’s last day will be this Saturday, October 19th. On Saturday we will celebrate our successes and say farewell to the place we have called home for the past 8 years. Our friends at Ciao Pizza will be delivering complementary pizzas through afternoon, and we will be releasing our final beer from the brewery: “Think About It, Sam.” This double IPA was designed to be the hoppiest beer we, or any brewery, has ever brewed. Clocking in at 15 lbs of hops per barrel it’s a dramatic celebration of the New England IPA style. Which hops, you ask? All of them. The rest of our hop inventory went into the final beer.

On a bright note, in the outpouring of response to our closing we’ve had numerous overtures seeking to bring back or save the brand, recipes and beers. While our social media channels may go dark after this weekend, we will be sure to make an announcement if we have anything to share in terms of developments.

New draft release today!

A special treat for everyone as we are tapping the last and final Entropy! This blend was kegged earlier this summer out of a few of our remaining Entropy barrels. Like other years, it is oak aged, and is still the rich decadent still ale you would find in our bottles. Bold smooth flavors lead to a sweeter finish.

We don't have a ton of merch left, however we do have some cool take-home items. Since we ran out of our classic logo stickers so quickly we are happy to share labels of a fair number of our amazing beers. These stickers are only a $1 each and are cool mini works of art.

We have a fair number of unused Mystic tap handles left for $40 each.

Lastly are bottles from our original beer! Batch 001, our og saison from many years back. If you would like one of these empty, beautiful, glass etched bottles we have a few for $10 each. Limit one per person.

Fresh batch of Wave Break today as well! Just canned this morning, this staff favorite may have included some pressuring our owner to let us do this one more time.

This crisp recipe is our classic Table Beer dry hopped with Perle and Santiam.

$13 per 4 pack, no limits per person. It will be available on draft in the coming days.

Limited Cellar Release Today!

We are breaking out a few different cases out for everyone's Monday.

First, we have our final round De Cacao. These are the last cases we have of this deliciously chocolatey barrel aged still ale. $75 per bottle of either 2016/2017.

Second we have Old Powderhouse! This wheat wine ale is beautifully easy drinking for it's abv and is bottle conditioned for a light carbonation. The difference between the two labels is one is batch number two and one is number three. $25 per 750ml bottle of either batch.

Lastly we are releasing the remaining bottles of Entropy! We sold out of the 2013 and 2014 last week, so now we have the next two years available. This rich decadent beer uses sherry yeast and was aged in bourbon and barrels. $80 per 2015 bottle, $75 per 2016 bottle.

We have very limited quantities of all beers listed above. One bottle per person per style and year.
