Banana Interlude 🍌🥃
2 oz Aged Rum75 oz Banana Syrup5 oz Lime Juice25 oz Demerara Syrup
2 Dashes Angostura Bitters
Banana Syrup (Cocktail Version)
Ingredients
* 2 ripe bananas
* 1 cup demerara sugar
* 1 cup water
* 1 tsp vanilla extract (optional but excellent)
* Small pinch of salt
Method
1. Slice the bananas into thin coins.
2. Add bananas, sugar, and water to a saucepan.
3. Heat on low-medium until the sugar dissolves.
Do not boil hard — you want gentle heat.
4. Simmer about 10–15 minutes, stirring occasionally.
5. Lightly mash the bananas while simmering to pull out more flavor.
6. Remove from heat and let steep another 15–20 minutes.
7. Fine strain through a mesh strainer or cheesecloth.
8. Add vanilla and a tiny pinch of salt.
9. Bottle and refrigerate.
