Many of you have been asking for an update on the status of the bar. The truth is, we fought tirelessly to make this happen and dedicated ourselves entirely to this endeavor, but ultimately, it wasn't to be. We truly believed in the concept, our partnership, the location, and in Charleston—and we still do. However, the delays we encountered drove costs higher and higher until it no longer made business sense to continue. When we finally received our permits back in August, the promised funding never materialized, and this latest obstacle proved to be the final straw.

We do not doubt that we would have created something special for the Charleston food and beverage community, and we are genuinely sorry that Hazel and Apple never came to fruition. We thank you for your continued support throughout this journey.

This week marks an important milestone: we have officially applied for our building permits. Given the numerous challenges this project has presented and the length of time it has taken, we often wondered if we would ever reach this point. However, we persevered.

Ideally, we should receive our approvals from the City within 6 to 8 weeks, so likely April sometime. Once we have them, we anticipate that construction will take approximately 33 weeks. Providing there are no further delays, this timeline suggests we could open towards the end of the year, a prospect which greatly excites us.

In the meantime, we are proceeding with structural repairs, including replacing the wooden rafters that support the building. Eventually, we will install a suspended ceiling to cover these rafters, behind which will live all our air conditioning units and speakers—features that you, as guests, won’t even notice.

We finally settled our lease dispute, which has been going on for the last fifteen months. This was a complicated and costly slog involving lawyers and many months of negotiations. There were moments when a resolution seemed like it might not be possible; many sleepless nights were had, and occasionally, we thought we would have to pack up and go home. Still, we persevered and, with great effort, reached an agreement that satisfied everyone. The lease is for 16 years with three 5-year extensions (31 years total), so we intend to be around for a while. With the lease finalized, we can now apply for our building permits and proceed with the next stages of the process. We will keep you updated on our progress, and once again, we want to thank you for your continued support and patience.

As many of you will likely realize, we have faced unforeseen roadblocks that have delayed our opening. Initially, we planned to open by October or November last year, but a series of complications hindered our progress. Due to the sensitivity of these issues, some of which are ongoing, we cannot divulge all the details. However, we can acknowledge that our original design was overly ambitious and presented numerous architectural challenges. As a result, we've had to significantly revise the design of the back section of the bar. We are finalizing a few details this week and will then file for the necessary permits. When we get those, we can finally start construction, which will likely take six to eight months. Although these delays have been incredibly challenging, we remain committed to contributing to Charleston's vibrant culinary landscape and becoming an integral part of the community. In the meantime, we thank you for your continued support and will keep you updated on all developments.

Jillian is a noted connoisseur of many things, mainly the liquid variety. But she is also an expert judge of pizza and recommends Renzo's here in Charleston as the best in town. So that's where the Hazel and Apple trio will be going tonight. It's actually a double celebration of sorts. It was Anne's birthday a couple of days ago, plus today is Sean and Anne's 19th wedding anniversary. Where does the time go? However, it'll be a restrained evening, with the proper celebration reserved for next week when Sean finishes his semester at Harvard. Then, he and Anne are off on their travels again, visiting Greece, Austria, northern Italy, and south-west France. Traveling does offer a welcome chance to decompress from the constant back and forth over our opening, but it is also about learning. Sean says, 'Traveling internationally is more than just tourism and sightseeing. It's a chance to witness life in another country, connect with local people, and discover their culture.' You’ve often heard us mention Outwalker Irish Whiskey – the unique blended Irish whiskey that Jillian created. Well, someone else mentioned it too: the jury at the very prestigious San Francisco World Spirits Competition 2024, which has awarded Outwalker two Golds with a score of 95/100. Pretty impressive, eh? Outwalker is already available in the UK, Ireland, and Scandinavian markets and will be arriving in the US soon (and, of course, in Hazel and Apple). Let's talk a little about the apple in our myths and legends. As you might expect, there are a great many fantastical tales involving druids, magic, heroic deeds, journeys to the Otherworld, and so on, but what they have in common is the apple itself, its natural energy and vitality; its power to sustain, revive and renew – which is very much what we aim to do at Hazel and Apple. The sour-tasting crab or wild apple is native to Ireland and was distilled and used for medicine. The sweet apple has been cultivated here since the Middle Ages and was so prized that the word itself (Ășll) became used for a person of great importance or distinction. So in Ireland, if someone calls you 'the apple of my eye,' you're not just special. You're the most special.

How do you make a dream come true? And not just any dream. A crazy, unlikely, impossible dream? Local restaurateur Ben Towill shared an inspiring message at TEDx Charleston last week, explaining that the most challenging part is simply starting. To illustrate his point, he told how he and a friend rowed across the Atlantic in 2022 when the COVID-19 pandemic forced all of his restaurants to close except for one, which he added "was on life support." Towill's message was that every dream is like an ocean waiting to be crossed. Getting to that point takes a lot of hard work. After that, it's up to you to cast off – and start. It's a story that resonated with us as we plow on across our own ocean towards opening Hazel and Apple, sometimes in the face of advice to the contrary. But it's our dream, so we'll keep going.

‘Roses are red, violets are too. This cocktail is red – by you know who
’ Terrible rhyme aside, sometimes Jillian finds inspiration not in a flavor, spirit, or ingredient but in color and gets very single-minded about it. Here you can see her in a recent red phase – red creole bitters, red Campari, with its strawberry and raspberry notes, rose water, and London dry gin (nope, not red) – mixed, stirred, strained, and poured over block ice, garnished with a spritz of grapefruit oil. The result is a vibrant summer negroni variation Jillian calls Looking for Lucky. If you see him, let him know his cocktail’s red. Sorry, ready.

Who doesn't love a happy hour? Well, it turns out Sean's never been much of a fan. 'I'd always associated them with places like sports and dive bars – never quality venues.' So what changed his mind? 'In a word, Charleston. Since coming here, Anne and I have discovered some high-quality places offering happy hours. Our favorite is The Grocery on Cannon Street.' Every night – and strictly for one hour, from 5 pm to 6 pm – and only at the bar, this restaurant offers 50% off its produce and pasta dishes and $5 draft beers. But it's not all about the discount. Quality is the differentiating factor at The Grocery and is what convinced Sean to join Team Happy Hour. So, check it out if you're in the neighborhood and treat yourself to some happiness.

Jillian is off on her travels again to Scandinavia with Outwalker, the new Irish whiskey she created, which we intend to have on the shelves in Hazel and Apple. Earlier in the week, Jillian spent the day in Malmö, Sweden, exploring the bar scene and discussing plans for Outwalker with distributors Bemakers. She also worked a shift at the exciting Care/Of Bar, making Irish whiskey cocktails. It was then on to Copenhagen and the chance to make a childhood dream come true with a visit to see the famous Little Mermaid statue (still Jillian's favorite Disney movie!). There was an Outwalker popup at the city's well-known Lidkoeb bar, where Jillian and the team met folks from the local bar community, told the Outwalker story – which Hans Christian Andersen himself would have enjoyed – and, of course, made some fine cocktails, just to demonstrate the whiskey's exceptional versatility.
