Today, I write with a heavy heart that on July 6th we lost one of our own. God puts people in our lives that will forever change us, and that bring us joy and happiness. Noi was not only our coworker, but part of our family and one of those people that forever changed us. She was a tiny little woman, but she had one of the biggest hearts. I enjoyed our talks about Thailand and trying to get her to teach me cuss words in Thai. I swear the only reason she worked as long as she did was because she needed to fuel her grocery shopping addiction, and she always knew who had the best deals! We all loved her very much, we had some very special moments over the years. Me scaring her with firecrackers in the kitchen, and her cussing me..then us all laughing ! Noi had a passion for cooking and was one of the best I've ever seen. I learned so much from her over the years in that OP kitchen. Still trying to get my shrimp and corn soup to taste like hers! She loved sharing her passion for cooking with her colleagues, like her outside the our place menu favorites shrimp fried rice, cabbage rolls or my favorite chocolate chip cookies (she would usually bring me my very own bag). Noi could work circles around kids a quarter of her age that included me! We are going to miss that kind-hearted, four foot two tall, feisty, cussing, hard working women! We would like offer prayers for the Coyle family. Services will be this Friday July 13, 2018 at the Seale funeral home in Central visitation 12-2pm and service to follow at 2pm.
