French onion soup was the starting point for this one.

Hand-pattied Sanders beef, hard seared with Swiss melted over it. Onions cooked down dark and sweet. Toasted brioche.
For the gravy, we took roasted beef gravy and worked it with caramelized onion, beef stock, Worcestershire, fresh thyme and black pepper. Deglazed the onions with brandy and reduced it down before everything went together.

The gravy goes on the plate first. Burger straight into it. The bottom of the brioche gets into the beef and onion gravy while the top stays toasted.

Garlic mashed potatoes on the side for whatever gravy survives the burger.

I grew up in San Diego eating Baja fish tacos.

Hot fish. Cool cabbage. Salsa fresca. Shredded cheese. White sauce. Lime. Corn tortilla. That combination has been stuck in my head for a long time.

So for Fish Fryday, I turned it into a bowl.

Two po***ck fillets, split and blackened on the flat top, over our cilantro-lime sticky rice. Around it, roasted corn and black beans served cool, crisp red cabbage, shredded radish, pickled red onion and fresh pico de gallo.

Then lime crema, shredded Mexican cheese and crushed corn tortilla across the whole thing. Fresh cilantro and a lime wedge to finish.

The temperatures matter here. Hot blackened fish and rice against cool vegetables and crema. Crisp cabbage and tortilla against soft rice and flaky fish. Lime running through all of it.

It eats like the fish tacos I grew up with. You just need a fork.

Bang Bang Shrimp Tacos came out of an idea from the line this week. I liked it. So we built it.

Three flour tortillas with crisp red cabbage, quick-pickled cucumber, and breaded shrimp tossed in our house Bang Bang sauce. Creamy, sweet heat up front, with a savory, nutty finish and a little more going on underneath than we’re going to tell you about.

Fresh pico made for tonight, lime crema, scallions and a lime wedge to finish.

A good idea from the line. A little work in the kitchen. On the board tonight.

HUNTER’S CHICKEN. TWO WAYS.

Cluck’n Monday accidentally turned into dinner.

Hunter’s Chicken is British pub food. Chicken, bacon, barbecue sauce, melted cheddar.

Which sounds pretty familiar around here.

So we started with the sandwich.

Crispy chicken. Applewood bacon. Sharp cheddar. Beer-battered onion ring. Dill pickles. Toasted brioche. And a mustard BBQ we built from our house Memphis sweet.

That’s the Hunter’s Chicken Fried Sandwich.

Then we kept going.

We’re working on the fall menu right now, and this one made too much sense as a dinner plate.

Two chicken breasts off the flat top with applewood bacon, mushrooms, grilled red onion, sharp cheddar and the same Hunter’s mustard BBQ. Garlic red-skin mashed potatoes and sautéed vegetables alongside.

Sandwich all day. Dinner after 4.
