Our chef has been hard at work crafting fresh, scratch-made pasta all week, and we can't wait to share it with you.

Smoked Salmon Tagliatelle
Fresh house-made tagliatelle tossed with smoked salmon and zucchini, finished in a traditional butter and Parmigiano Reggiano cream sauce. Rich, comforting, and made completely from scratch.

There are moments in this industry that feel a little bigger than food.

Recently, we welcomed Chef Steven to the team at Iron Tail Tavern. Steven is from the Republic of San Marino — one of the smallest republics in the world, completely surrounded by Italy, and ironically smaller than Grand Island, New York.

As the owner of Iron Tail Tavern, this feels especially meaningful to me because my mother was born and raised in San Marino. As a little girl growing up, food was never just food — it was family, tradition, hospitality, and gathering around a table together. So meeting a chef from the same small republic that shaped so much of my family’s culture feels incredibly special.

While Iron Tail Tavern is not becoming an Italian restaurant, this connection feels like a natural continuation of who we already are: a Mediterranean-influenced tavern rooted in comfort, culture, and genuine hospitality.

We’re excited to continue evolving our menu with Chef Steven’s authentic Mediterranean background, passion, and creativity while staying true to what Iron Tail has always been.

Sometimes the world feels very big — and very small — all at once.
