In Japan, sake brewers are said to have unusually dewy skin - something about the sake kasu, the leftover rice lees from pressing, being rich in kojic acid, enzymes, and vitamins. We’ve been sitting on this knowledge for years.
Years ago, when we were still figuring out how to run a brewery, our friend José from tree*star - a Queens craft soap maker we met through the spice world (shoutout Burlap & Barrel) - made a kasu soap with us out of his apartment workshop. It was really good. And then somehow five years went by.

Fast forward to now: José came back around with an idea to take it further - this time looping in Great Joy Family Farm, the Upstate growers behind the NY Akitakomachi rice we use for NY Jizake, our true-local sake. Their rice husk went in for exfoliation, our kasu (the stuff that otherwise goes to a local chicken farm - we get fresh eggs in return) went in for all the good skin stuff, cold-processed into a bar that moisturizes instead of stripping. Three makers, two byproducts, one reunion collab.

KASU SOAP. José’s punchline: “Please shower responsibly.” That’s why we love him. 🫧🧼🛀🏻🍶🌾🩵

Say hello to You Li, our new Assistant Brewer!

You Li first heard about Kato Sake Works through her aunt and uncle, long time fans of KSW. One rainy night, You Li finally had a chance to enjoy an exciting flight of sake, taste amazake for the first time, eat delicious food from a pop-up, and delight in an evening of jazz. As a fermentation enthusiast and genuine fan of KSW, the chance to be a part of sake production is a dream come true!

“I love the idea that traditional methods of production for foods and beverages like yogurt and sake, have been preserved for thousands of years and yet there is still so much room for innovation and creativity.”

When she’s not brewing sake, she works at a yogurt company and as a climbing instructor. In her free time, she enjoys long bike rides, climbing, and reading in the park!

Catch You Li in the brewery sometime soon and say hey!

Meet Emma, our new taproom bartender!

Emma first found out about Kato Sake Works when her girlfriend shared with her a flyer for a collab between KSW and another neighborhood spot they frequented. As a brewer of makgeolli herself, it was exciting to find this brewery in her backyard.

Hailing from the small town of the Upper West Side, Emma was impressed by the dynamic ways in which Kato Sake engages and builds from its surrounding community, from hosting pop-ups to even crafting some brews made with local rice. Looking for any chance to join the KSW team, she ultimately found an opening for a job as a bartender.

Outside of work, you’re likely to find Emma testing her makgeolli brews, blasting freestyle while riding on an ebike, or tinkering away at a new craft.

Come by the taproom and say hello to Emma!
