day old spaghetti - for 4 ppl
1 lb dry spaghetti
3/4-1 cup grated grana padano or parmesan
1/2 cup extra virgin olive oil
1/4 lemon juice
1/4 warm pasta water
1/4 cup chopped herb mix of parsley, dill & scallion
2 tablespoons salt
1 teaspoon red chili
4 teaspoons breadcrumbs
1. cook pasta in salted boiling water to desired texture. be sure to reserve pasta water for later use.
2. in a large bowl combine olive oil, lemon juice, herbs salt & red chili flakes. when pasta is done cooking, it will be added to this sauce base. so this can be made ahead of time.
3. once the pasta is done cooking, strain and add it to the large mixing bowl. also add in the grated parmesan cheese & breadcrumbs along with the warm pasta water to the bowl & mix to combine. you want to mix everything until the cheese emulsifies into the sauce & coats the pasta evenly.
4. divide the pasta into four bowls and garnish with more herbs, breadcrumbs, parmesan cheese & lemon zest. if you like it spicy, also add more red chili flakes to your liking.✌️🧡
