The olive oil on the green zebra striped tomatoes was made from the same olives whose yeast is used to ferment the junmai ginjo and the whole table gasped 🥰✨ I will write more about this tasting soon, but thank you for coming to talk about the diversity of tomatoes and sake, how much we crave umami and accidental color coordination with me 🙇🏻‍♀️ I’ll never get over it 🫶

We always say that Kanbara “Bride of the Fox” tastes like sungold tomatoes, so we added citrine sunnies from Momma’s Grocery + Wine to the menu while they are in season 🦊🧡 Swipe to see them 🍅✨

“This savory sake is inspired by local legends of Niigata’s annual fox-bride festival. Local lore tells of mysterious lights that appeared on nearby Mt. Kirin in the distant past, which are claimed to be the lanterns carried in the fox-bride procession.

With a 50% polishing rate, this sake could technically qualify as a Junmai Daiginjo, but the savory notes and food pairing versatility identify more with the style expected from Junmai Ginjo.” Kome Collective

These sungolds are dressed in 株式会社 和田萬 Golden Sesame Oil and salt ✨ Wadaman Golden Sesame Oil is a premium oil from Osaka, Japan, crafted by Wadaman, a family-owned sesame specialist operating for over 130 years 🙇🏻‍♀️

This is the storefront for Wadaman in Osaka. We were so lucky to visit in February of this year with our friend and guide Miyo 🎊 Their mascot is Gomayan, a tiny sesame seed whose statue sits outside the front door to welcome guests 🥰

Our first Sake + BBQ tasting was today! Join us for another next Sunday, August 23rd at 1pm 🔥 wanted to mirror BBQ’s flavor pillars of smoke, sweet and tang in our sake line up…

SMOKE: Izumibashi ‘Black Dragon” Kimoto Junmai
The chameleon of today’s line up with an iconic smoky flavor note that totally transforms from silky and dry to juicy with each bbq bite. We picked it to hold hands with the smoked meat but it tricked us and sang with the cucumber pickles, which are the best color pink due to beets and raspberry vinegar with a few other ingredients we can’t share with you because it’s not our recipe (but our cucumber recipe is on our blog if you need one!) - see the last slide 💓

SWEET: Kameman Shuzo Genmaishu
A real sweetie pie that literally gives pie and is twinning with the warm spices in the candied yams. This bottle will be a shining star for the holiday season, especially with apple and pumpkin pies on Thanksgiving. The flavor notes we loved today were honeysuckle, hazelnut and caramel. We might not have this bottle next week! Sorry! Supply issues 😅

TANG: Terada Honke ‘Daigo no Shizuku’ Bodaimoto
Everyone’s favorite today! Generally a wild card because of the wild nature of the bottle itself: Bodaimoto is an ancient sake brewing method that uses naturally acidified rice water to create a fermentation starter producing sake with really bright acidity, savory depth, and tangy flavors. The tang is what we were seeking today and it surprised us by singing with Formaggio’s iconic Mac and Cheese in addition to the North Carolina Chopped Slaw
