Let us be the first to introduce you to OPUS 400 - in celebration of 400 unique batches brewed, New Groove brings this decadent bourbon barrel aged barleywine in collaboration with The Hollows (Amsterdam).
As our momentous 400th batch approached on the brew schedule, we knew we had to craft something truly extraordinary - a massive, rich, and decadently complex barleywine worthy of such a milestone. Fate stepped in when we reconnected with legendary brewer, friend, and icon in the modern barleywine landscape Jason Pellett, the visionary who built Orpheus Brewing in Atlanta and was preparing to launch his next chapter, The Hollows, in Amsterdam. Just days before his flight across the Atlantic, Jason joined us at our Boiling Springs brewery. Together, we executed an ambitious double-mash and an exhaustive, long-boil process to forge an uncompromisingly huge malt backbone.
As lifelong admirers of classic Wild Turkey bourbon, we were ecstatic to secure a highly coveted shipment of 12-year+ Wild Turkey barrels - originally utilized for their exclusive overseas Distiller's Reserve release. After meticulously fermenting and conditioning the base beer, we transferred it immediately into these freshly emptied, ultra-aromatic oak casks. For 30 patient months, while the daily hustle of brewery life hummed around them, these barrels rested in cool, undisturbed silence, slowly drawing out rich notes of vanilla, toasted oak, caramel, and warm spirit. Now, after two and a half years of maturation, this extraordinary liquid is finally ready to be revealed.
