Some dishes travel further than others. Kibi frito made its way from Lebanon to the Yucatán over a century ago — and now, to downtown Bentonville. Chef Rafael wanted this table to reflect the full story of Mexico, not just the parts most people already know. Trigo y carne, fried until golden, carrying a history of two cultures finding home in one dish. Now it’s part of ours too.

Meet Carlos Alberto.

Three years into the Yeyo's family, Carlos leads the 8th Street kitchen with an eye for quality, presentation, and training his team right — but for him, it all comes down to one thing: "lo más importante es hacer felices a los comensales." Making guests happy.

A taco sampler fan through and through, his drink of choice is the Palo Santo — "me trae muy buenos recuerdos." What keeps him here isn't just the food, it's the history in every dish: "todo lo que hacemos me recuerda a México."

Fun fact: his favorite mole is poblano — but Carlos is Oaxaqueño, and as he puts it, "lo que hacemos en Yeyo's es oaxaqueño, igual que yo."
