Revival :: restaurant + beer garden

This new concept will be located in The Palace with Baja, where Valhalla currently resides. Tonight will be the last night we serve the full Valhalla menu. Even though Valhalla was not our concept, it has always held a special place in our hearts since Day 1, mostly because we saw how hard Shawn worked on it and that is something we relate to and respect.
If we were just “business people” we would continue with no change. But as our crews & anyone who dines with us know, Craig and I are IN IT. We are in the kitchens, we’re bussing tables, creating recipes, mowing the yard, running food, greeting guests, etc, etc. So for that reason, and because we spend so much of our time in our restaurants, we want to be serving a menu & working in a concept of our own. I hope that makes sense to the Valhalla fans.
The restaurants are what I think about most of my day - everything done is with the best intentions.
Rest assured, although this is a totally new restaurant, we will be keeping a few of Valhalla’s most-loved items. The menu is almost ready for the public (if yesterday wasn’t Cinco & I wasn’t prepping at Rober, I’d probably have it knocked out today. Small business life, right?). You will see it probably moments after I hit that last “Save”, I promise.
The staff is SO excited about Revival’s food and concept. We are too.
We have an award-winning entertainment program (yay, Craig!) and music will remain on Thursday nights (6pm), and Saturdays have now been put on the calendar (630pm). Craig has done a fantastic job with the sound and has added a killer light and haze show. Check it out if you haven’t - it’s truly amazing what he’s done.
Revival opens the evening of May 11th. It will be our first day open to the public without any true “run-throughs”, so please keep that in mind if your burger, loaded fries, sausage dogs, pasta, etc., takes just a tad longer than expected - we appreciate your patience.
If staffing permits… yes, we will be open for lunch (probably my most asked question regarding Revival).
And if you see Joanna Helm, the General Manager of Baja Benton, Valhalla, & Revival, thank her for working so hard and keeping us on track.
Sadly, 15 minutes after we made the first Revival announcement, her mother unexpectedly passed away. With her being the backbone of this project, we wanted to respectfully not rush into it, which is why we have been a bit quiet about it since, but she is back at work & full steam ahead and determined to get this open next week for the public and for the staff. Thank you, Jo.
We are excited for you to see the place, the beer garden, taste the food, check out Sydney's new cocktails, and see the huge beer selection we have been working on.

The Baja food truck was on Military Rd 11 years ago. For 11 years you have stood behind us, eaten our food, & gotten to know us and our crazy, awesome, superb crews.
We are the luckiest people and forever grateful for all of you.
