In 1996, Coach “Teddy” Novio introduced the greater Bangor area to our owner, Bob Cutler. It’s been more than two decades since that first meeting, and not a week goes by where Teddy isn’t coaching or encouraging Bob to be inspired in his personal and professional life. To that end, we have named our inspired bistro after Edward Saverio Novio, one of the most influential, kindest and most honest f

riends we could ever ask for. We strive to ensure that we do his name justice. Our menu is small, selective, and the items are representative of the education, training, travels and experiences of our chef and team. We feature meats, seafood from local farms and purveyors and produce from our 1500 square foot greenhouse that is located ten minutes from the bistro. While small, the menu offers vegetarian and gluten free options, beautiful soups and salads, and inspired dishes from humble beggnings. The bistro offers a full service bar that showcases an elegant yet approachable wine list, craft beers, signature cocktails and an extensive whiskey list of over 100 unique offerings. Items on the menu will change often as the seasons change and as our team becomes inspired by the stories of experiences had by our guests. Our staff shouldn’t to have favorites but we do. A favorite whiskey, a favorite cocktail, the chowder and mousse but this favorite is our favorite monthly wine dinners. The dinner we host right before we go on summer vacation, the dinner the allows our kitchen team to cook outside and explore seasonal cooking techniques and we get to pair those dishes with wines that we look forward to drinking while on vacation and celebrating the country’s 250th bday.

The BBQ & porch wine dinner will be on the 24th & 25th of June at 6:30. Dinners usually boast five courses and four paired wines but there are rumors that the draft menu has some creative & thematic amuse-bouches. Please call the bistro to reserve your table or barstool. Cheers

When the opportunity presents itself our team is always willing to take part in educational and cultural experiences. In the past we have done week long “camps” in Willamette Valley to forge relationships & gain a better appreciation of Oregon wines, have traveled to Kentucky & Wyoming to pick whiskey barrels and learn about bourbon production, Burgundy to taste wine in the vineyards where the grapes were grown, drink Champagne in cellars surrounded by bottles that predated WW2 and Italy to drink wine with winemakers in the vineyards that grow some of the world’s most prestigious grapes.

This October we are traveling to Piedmont to take a deeper dive into the world of Nebbiolo and the foods that compliment the varietal. Along the way we will be stopping in multiple growing regions within Piedmont and will even be spending a few hours walking thru the woods with a truffle hunting dog.

We have limited space for our guests and customers to join us. We will be offering two Open Houses to give you an opportunity to hear about the experience and see if the learning opportunity is for you. If you are unable to join us at the Open House please call the Bistro to set up a time to discuss details with Bob.

Bob’s favorite movie franchise? That would be @007 - the series he would watch with his family growing up, with his team when enlisted in the Navy and with his friends in college. His favorite Scotch? That is even easier, - Natural Color, historic and the most prestigious whiskey in the world. So why would we not get excited to celebrate the Diamonds are Forever 55th anniversary with a whiskey that was distilled in 2007 - the perfect dram to enjoy while reflecting on your favorite Bond movie or while raising in honor of a special celebration.
