You all loved these so much a few years ago we had to bring them back for round 2. Big enough for your farmers market haul, your current book stack, and yes, even a giant tin of potato chips for peak picnic season.

Foodie friends, our Hitchcock Weekly Meal Kits are here at the market at Bainbridge. Formerly our CSA, now reimagined for total flexibility. No subscriptions, no commitment, just really good food when you want it.

Every Saturday we drop a new, chef-built meal sourced from local fisheries, farmers, and purveyors. Shop it piece by piece or take it home as a complete kit, with simple guidance on how to cook it the Hitchcock way.

This week we’re leaning into deep umami with katsutake sablefish. Your kit could include a dashi starter with kombu, bonito flakes, and locally foraged shiitake mushrooms, paired with rice and fresh seasonal produce. At the center is a beautiful cut of marinated sablefish from our friends at Key City Fish Company in Port Townsend.

Sablefish, often called black cod, is prized for its rich fat content, silky texture, and forgiving nature in the pan. This preparation draws from Japanese kasuzuke traditions, where fish is marinated in sake lees, bringing natural sweetness and depth. Our version uses a miso and mirin-forward marinade with our own shio koji, creating that signature caramelization and layered flavor when cooked.

This week’s meal kit has arrived at our market at Hitchcock on Bainbridge Island.

Shop it piece by piece or take it as a complete expression of the season. At the center is a golden Pure Country pork loin, thoughtfully sourced through

It’s paired with farro and oyster mushrooms for a deeply grounded, Northwest plate.

Around it, you’ll find apples and pears from Yakima, miner’s lettuce for a simple, bright salad, and a few elements from our kitchen to carry it through. Solea vinaigrette from last week’s batch, along with our fermented mustard and giardiniera, all made at the lab.

Cook it at home the Hitchcock way. Eat with the season. Support what’s close to the ground.

Weekly meal kits just dropped Bainbridge Island 📣

We’re leaning all the way into the season with a Panzanella built around wild-caught Blackmouth king salmon, aka younger Chinook salmon that stay close to home in the Salish Sea. Rich, clean, and deeply tied to these waters, it’s one of those ingredients that reminds you exactly where you are.

The Blackmouth Kings season is in full swing. Choosing U.S. wild-caught Chinook means supporting a system that prioritizes sustainability, careful regulation, and the long game so we can keep cooking and eating like this for generations. Thanks to our friends who just sourced these big boys from Neah Bay.

This dish is a little love letter to Tuscany, but not in a traditionalist way. Think rustic fresh bread, bright tomato vinaigrette, fresh herbs, and the first veggies of the season all coming together with that perfectly cooked salmon. (We tell you how to cook it) It’s familiar, but reimagined through a Pacific Northwest lens using what’s growing and thriving around us right now.

Special note because we’re very excited about this one: beautiful oyster mushrooms from Foraged & Found.

Meal kits are available at the cafe on Winslow while they last. Come grab dinner, poke around our little farm stand + market moment, and stock up on some of the best seasonal, local goods we can get our hands on 🧺✨
