Every Saturday we drop a new, chef-built meal sourced from local fisheries, farmers, and purveyors. Shop it piece by piece or take it home as a complete kit, with simple guidance on how to cook it the Hitchcock way.
This week we’re leaning into deep umami with katsutake sablefish. Your kit could include a dashi starter with kombu, bonito flakes, and locally foraged shiitake mushrooms, paired with rice and fresh seasonal produce. At the center is a beautiful cut of marinated sablefish from our friends at Key City Fish Company in Port Townsend.
Sablefish, often called black cod, is prized for its rich fat content, silky texture, and forgiving nature in the pan. This preparation draws from Japanese kasuzuke traditions, where fish is marinated in sake lees, bringing natural sweetness and depth. Our version uses a miso and mirin-forward marinade with our own shio koji, creating that signature caramelization and layered flavor when cooked.
