Currantly drinking… 😋

The newest addition to our Lovely Fruit series—featuring Door County grown blush currants from our friends at Healthy Ridge Farm.

The most satisfying notes of pink lemonde, white grape, grapefruit peel + elderflower, with balanced acidity & a dry finish.

Last summer, we received the most beautiful, light-pink currants from Healthy Ridge Farm. We stuffed these whole currants (stems, seeds & all) into a couple oak barrels and topped them off with a select blend of barrel-fermented saison.

We let the beer mingle on the currants for nearly 5 months—allowing the natural sugars in the currants to be fermented and interlocking the nuanced flavor of the currants into the beer. Once mature, we transferred the beer off the fruit to package. The beer has been naturally carbonating & conditioning in the can and keg for the past 4 months.

Lovely Currants is now pouring on draft & available in cans to-go in our taproom.

In less than a week, our team heads down to Chicago for the awards as a nominee in Outstanding Beverage Program.

Never in our wildest dreams did we think our name would pop up on a semifinalist list—let alone the finalist list.

We’re honored to be among so many incredible hospitality businesses being recognized. And grateful to share this moment with those that have been a part of our journey.

The day before the awards, on Sunday June 14, we’ll be hanging with our friends in their back lot from 2-5pm. They be slinging a Sway-inspired pizza + pouring a few of our beers. Come hang and say hi.

Introducing… County Pine!

Our newest County beer brewed with locally foraged white pine candles. 🕯️

Our County series highlights singular foraged ingredients, harvested right here in Door County. Much like spruce tips, the fresh growth from white pine is packed with aromatic oils that can pair extremely well with beer. This fresh growth appears as lengthy, vertical candles from the ends of pine branches.

The white pine candles used in this batch were harvested a year ago in late spring 2025, and frozen until we were ready to brew with them this past winter.

The base beer for County Pine is built on barley + wheat, as well as some Wisconsin flaked wheat + oats from . In the kettle, we staggered additions of white pine candles throughout the boil to layer flavor & aromatics. The beer underwent free-rise fermentation in one of our oak foeders with our house mixed culture—providing a host of esters + phenolics that meld and add complex balance to the white pine character.

Finally, we package conditioned & naturally carbonated the beer over the last two months.

Lush notes of candied pine, orange, bubblegum & eucalyptus.

County Pine will be flowing on draft & available in cans to-go when we open tomorrow (Tuesday)!

Let the weekend take you HIGHER. 🪽

The Higher We Flew, our American Pale Ale, has made its return to the taproom.

The Higher We Flew features barley + a touch of wheat, paired with some of our favorite classic American hops—Cascade, Comet + Chinook—all grown right here in Wisconsin.

Zippy citrus, soft pine, pineapple soda, and dank resin. All on a dry canvas.

We’re also hosting live music TODAY from duo from 3-5pm.

IT’S LOVELY CHERRIES SEASON! 🍒

This weekend, we welcome back Lovely Cherries!

One in a series of beers that we release each year that are refermented on local Door County fruit, from the past summer’s harvest. This batch of Lovely Cherries highlights Door County Balaton & Montmorency cherries, grown by our friends Barnard Farms.

It has deep cherry character, with low acidity and supporting notes of cinnamon, clove, lime zest & almond.

Like all of our fruit beers, Lovely Cherries is made only once each year using freshly harvested fruit. We blend select barrels onto whole fruit and allow the beer to referment on and extract flavor from the fruit over many months. We then allow the beer to naturally carbonate & condition in the package over many more months. It’s a long, slow process—but the results are well worth it.

With each harvest and each chosen blend of barrels, each batch is completely unique.

We’re kicking the season off this Saturday with 5-7pm, followed by Sunday with 3-5pm.

We’ll also be hosting music on the last Wednesday of each month with & friends 5-7pm, starting on 5/27!

Today: our latest batch of County Beer arrives for Mushroom Fest. 🍄

County Chanterelle is our oak-fermented saison brewed with locally foraged chanterelle mushrooms.

Our County series of beers highlight singular foraged plants—in this case, fungi—harvested right here in Door County. This year’s County Chanterelle was brewed back in the fall, with a bunch of chanterelles locally foraged over last summer.

The base beer features barley, along with plenty of wheat + oats, and a touch of Wisconsin-grown hops. We layered the chanterelles over multiple kettle additions to build flavor + aromatics.

The beer was fermented in an oak foeder with our house mixed culture of yeast + bacteria, and naturally carbonated + conditioned in the can/keg over the course of several months.

The most pleasing notes of white peach, clove, salted lime & pepper.

Debuting this weekend: Through The Wild Woods, Brown Ale with locally foraged chaga.

Chaga was the first fungi I ever experimented with in brewing—and I have been waiting for the right moment to introduce it in a Sway beer. Chaga’s woody, nutty, and natural vanilla character intertwines seamlessly in darker, malty beers.

Chaga is a parasitic fungus that grows locally on birch trees—it appears as a hard, black, crusty mass. From the look of things, it doesn’t have much going on. But chaga is actually rich in antioxidants and nutrients and can been used in teas for immune support and a host of other health benefits. 

Through The Wild Woods is built on a characterful English-inspired malted barley from , along with a bit of Sugar Creek crystal wheat + chocolate rye & flaked oats. We boiled the chaga in the kettle for several hours to extract as much nuanced flavor from the fungi as we could, before fermenting the beer in a stainless tank with a clean ale yeast.

We get notes of roasted hazelnut, toffee & fallen leaves. 4.6% ABV.

Available on side-pull + in cans starting this weekend at our Mushroom Fest!
