Still Austin Whiskey Co.

Still Austin Whiskey Co. The Spirit of Creativity We founded Still Austin with a sense of double vision—one eye looking to the future, and the other to the past.
(1473)

We look to the past to honor the traditions of grain-to-glass distilling: from our use of 100% Texas-grown grains, to the spirits aging in our Hill Country rickhouse, to our use of an ancient French barrel-oxygenation technique called Slow-Water Reduction, to our 42-foot Scottish still (lovingly dubbed “Nancy.”) But we also look to the future—and we do that by celebrating what we call a “New Mytho

logy” of our home city. You can find representatives of this mythology on each of our bottles. These are the people we admire, the archetypes of our world: the musicians, the visionaries, the lovers, the scientists, the oddballs, the artists, the everyday dreamers.

For more:

If you’re not a whiskey expert, you might assume that all bourbon comes from Kentucky. It makes sense, right? Pretty much every bourbon distillery you hear about in the news or see on your liquor store shelf is distilled in the Bluegrass State. Well, about 95% of the bourbon whiskey produced is ma...

And the amazing art on the label comes from local legend Jason Eatherly known for his iconic street art “Queen Eli”. He’s also a damn good tattoo artist and even built and restored his own antique Chevy pickup 🔥

Coming in at 114 proof with a mashbill of: 70% Texas White Corn, 25% Sonora Soft White Wheat, and 5% Wildfire Malted Barley

Tasting Notes:

Nose: Soft with notes of toffee, dried sunflower, pecan, toasted bread, raw almond, cherry cola, and rich wood resin.

Palate: Rich and dense, with hints of almond mousse, fresh croissant, orange blossom, rose hips, muscat jelly, and pancakes with butter-pecan glaze.

Finish: Long with soft and sticky tannins. Notes of cranberry skin, ripe pomegranate, fresh wood sap, and cured to***co leaf establish balance and structure.

"The Manhattan should properly be classified not as a single drink but as a class of drink. Using the template, you can experiment by altering whiskeys and vermouths. A spicy whiskey such as Still Austin’s Cask Strength Rye, for example, works sublimely well with a vanilla-forward vermouth like Carpano Antica, with orange bitters to lend a light citrus note." --Garden & Gun Magazine
