collaboration beer with :

Neighborwood: Loral and Cashmere 7.75% ABV

“Early in 2021 we brewed a simple base beer with barley and wheat malt and a small amount of hops. After primary fermentation in stainless with a neutral ale yeast, the beer was transferred into Waylon, our 15 BBL Oak Foeder, along with a mixed culture of Brettanomyces yeast and Lactobacillus bacteria sourced from .

The base beer has aged for 18+ months in the Foeder and has fermented out completely.

This is the first beer created from the Solera style program we plan to incorporate with the Waylon Foeder, and for the collaboration, we removed a portion of the aged beer and dry-hopped it with Loral and Cashmere hops. The citrusy and herbal hop notes blend well with the base beer's funky dryness and subtle acidity.

The plan will be to remove a portion of aged beer from the Foeder for blending and producing unique beers and then replacing that portion with new and different young beer.
The Foeder will always be changing and the beers created will always be unique but also tied to the ones created before. The mixed culture will always live in the wood creating a happy neighborhood of flavor.

We’re happy that Craft Pride picked us to collaborate with and excited to get our first solera-style beer out to people at such a great event. Looking forward to sharing it with everyone!"

collaboration beer with Craft Pride:

"We love exploring brewing and fermentation traditions from around the world at Fitzhugh. This collaboration with Craft Pride was an awesome opportunity to experiment with some unique ingredients.

Iceland has a distilled spirit native to the country called Brennivin. A close cousin of the popular drink “aquavit” from Scandanavia, Brennivin is a clear liquor made with rye and root vegetables and steeped with caraway seeds after distillation. We took that information and brewed a beer based on the Brennivin flavor profile. Brewed with 60% rye malt, 40% barley, 50lbs of roasted parsnips, and a dash of caraway seeds in the boil, this Brennivin beer is spicy, earthy, and delicious.

We can’t wait for you to try it! Skál!"

Family Business Beer Co. collaboration with Craft Pride:

This rustic Fig and Carrot Farmhouse Ale comes in at around 4.8% abv. 50lbs of carrots were shredded and thrown into the mash. 50lbs of Turkish figs were rehydrated, pureed and added to the fermenter.
Tasting notes of dark, dried fruit in the nose, with that distinct Belgian "spice" flavor tasting of spice, fruit and a touch of pipe to***co finishing dry with an earthy note.

Acopon Brewing Collaboration with Craft Pride:

"A Rat King is a macabre term for a group of rats whose tails tie together in a knot. This unusual phenomenon was mostly noted in Germany, and was seen as a bad omen, usually associated with the plague.
Our Rat King is a double IPA. At just over 9% abv, this beer packs a punch, and with 96 IBUs, it packs a punch of hops too. We mashed at a little lower temperature to make sure it attenuated well, giving it a lighter body and drier finish than you might expect from a double IPA. With copious amounts of Amarillo, Citra, Mosaic and Simcoe, this beer is a showcase for hops.

In the cask (for our collaboration with Craft Pride) we added beet and carrot juice which adds a unique earthiness and a blood red color."
