Of course, no trip to France for us would be complete without a stop in Reims/Champagne - we’re endlessly inspired by sparkling wine.

During our quick visit, we toured a few of the larger houses but were especially lucky to meet the winemaker at Champagne Louis Brochet. Their wines absolutely blew us away - elegant, balanced, and deeply expressive. The brother-and-sister team behind Louis Brochet are the fourth generation in their family to make Champagne, and their commitment to quality was inspiring. We left incredibly thankful for the chance to talk, taste, and learn from them.

After Brochet (and quick lunch at Ruinart, we visited Taittinger, where we descended into the ancient chalk quarries - crayères - first carved out in the 4th century. These underground galleries later became part of the medieval Abbey of Saint-Nicaise, and remnants of that history still remain. One of the most striking moments was seeing a 15th-century statue from the abbey’s time as a church. The caves also carry the markings of those who sheltered there during wartime (and generations before) - initials and graffiti layered across centuries. Walking through Roman, medieval, and modern history all in one place was unforgettable.

In Paris, we popped into the Louvre (right after a robbery made headlines), visited Milagro - an incredible restaurant (you must try if you visit Paris) where we met the sweetest pup, Tofu ❤, and enjoyed a perfect view of the Eiffel Tower.

This final stretch of the trip left us even more inspired. Behind every great glass - whether cider, Champagne, or Calvados - there’s always history, craftsmanship, and a touch of magic.

During our time in Normandy, we were honored to spend time with legendary cider and Calvados producers, Guillaume Drouin and Etienne Dupont .

Each has refined their family craft over generations - balancing instinct and precision, restraint and boldness. Their generosity and insight deepened our appreciation for how great cider and brandy honor both fruit and time.

We also visited Calvados Pierre Huet @ , Domaine du Coquerel , and Pacory - Ferme des Grimaux , learning about the different traditions and processes that make Normandy’s cider and calvados culture so unique.

Normandy!
We have a grower in Normandy - and they have a château!

Through an amazing twist of events (the kind that can only be described as kismet), we met a wonderful couple here in Colorado who own an incredible property in Normandy. Since last harvest, we’ve been quietly working with them to create cider from their apples - a cider we’ll release this December first exclusively to our club members. We recently returned from an unforgettable trip to France, where we visited our friends at their château - walking their orchard, tasting their apples, and dreaming about the cider those apples would become. Over the next few posts, we’ll share more from this incredible trip. But we hope you’ll join us to taste the first cider made from their fruit on American soil and to hear the story of Château La Ramiterre (hint: a little bit of history is in one of the pics on this post). Tickets will be limited, and club members get the first chance to purchase them! Stay tuned for more details and more of our trip.
