Gardening looks a bit different at our PNW home, but where there’s a will, there’s a way! A lovely Vego 6’x2’ raised bed, and many pots are our new garden. There’s much left to plant at staggered dates (thanks to the Farmers Almanac), but root veggies are starting to sprout! 🤩 French Breakfast Radish and Beets have appeared. I expect my carrots to show soon too.

Roast Chicken

A few days ago I decided I wanted to roast a whole chicken since it’s been chilly. Brined the chicken for two days, roasted with lots of fresh herbs, butter, and seasonings. Served with mash and carrots. Brian and Ben had the dark meat that I would normally fight for, but the breast was super juicy and delicious too! Thanks schmoopie for kitchen help!

Black Dahl Makhani

One of our favorite vegetarian India dishes. Black lentil and a bit of red kidney beans slow simmered with wonderful Indian spices and herbs, finished with cream, butter, and Kasuri Methi, and served with basmati rice. It’s so delicious!
