Chimole is a Yucatecan preparation built around recado negro, the region’s intensely dark seasoning paste made with deeply charred chiles and spices. It gives the turkey its earthy, smoky flavor and unmistakable nearly black color.

Chef Hector cooks the turkey in banana leaf and serves it with Mofongo Verde, finishing Mofongo Month with one of the most distinctive flavors of the Yucatán. (Consider this turkey your chance to train for Thanksgiving mano!)

This is the last week of Mofongo Month for Hispanic Heritage Month!

Now let’s go to Peru! 🇵🇪Tacacho is an Amazonian Peruvian dish made from mashed plantain, which makes it a pretty close primo to Puerto Rican mofongo. For this dish, Chef Hector Santiago keeps his signature Mofongo Verde and tops it with tuna ceviche featuring two ingredients closely tied to the Peruvian Amazon: cocona, a tart tropical fruit (he uses mango and passion fruit to match) and ají charapita, a tiny chile known for its bright, aromatic heat that packs a mighty punch in a small bite. (Chef says to be warned if you cannot handle the heat!)
