Coffee Chat Q&A with Chef Tim!

Q: What's your favorite food/type of food to eat or make?
A: My favorite foods to eat is something that I did NOT make. I really enjoy making pastries, because it’s more challenging.

Q: Where does your inspiration for new dishes come from?
A: I draw a lot of inspiration from just walking around outside. I will regularly take walks around DTA just to clear my head, take in the surroundings and really embrace the season to create new dishes.

Q: How do you think food and music relate to each other?
A: They don’t. But I strongly feel that the journey is what matters more. It take 10’s of years to be good an learning an instrument, the same applies to cooking, honing your craft as a chef takes countless hours to get your accuracy, technique and palate to an acceptable level. When I hear chefs or cooks say they have been cooking for 5-7 years, that is a good start but nowhere near the end. It requires more discipline.

Q: Working in a kitchen seems stressful- how do you manage?
A: Yes, it is. I have kids now, so working is like my personal time! Hahahah. That being said, the kitchen is not that stressful in the scope of life.

Q: Who is Chef Tim when he isn't in a kitchen?
A: I’m just a regular guy. I like to hang with the family, friends, play poker, try to get a date night in with my wife (easier said than done).

Coffee with Chip -- Live Music

Different people have strong emotional connections to different things. I guess I have an unnaturally strong emotional connection to live music. Like many of you, I suspect.

For Patricia, who’s very smart about music, that strong emotional connection comes from clothes. She has the spooky ability to tell you what she was wearing at hundreds of events going back decades. Because she’s emotionally connected to those clothes (and always looks great as a result).

My emotional connection to live music started in my youth -- with experiences so strong that they shocked me. Like everybody, I was listening to the Beatles on records and the radio in 1963-65. I liked the recordings, but I wasn’t blown away until I heard a local (Kalamazoo) band play Ticket To Ride live at a shopping center in my neighborhood. Completely knocked me out (and made me buy a drum set)! In my late high school years, I’d heard Van Morrison’s Moondance. Nice song, but it didn’t move me until I heard some college kids play it live (with a flute!) at a 1972 coffee shop show. There, I was mesmerized.

I guess 1972 was a big year. That summer, I heard the Count Basie band play on the roof of a parking garage in Kalamazoo. Odd fact: Patricia was at that concert too, even though we wouldn’t meet for another 5 years. But the swinging power and relaxed precision of the Basie band just killed me. I can feel it today. I’ve never heard anything since then that came close -- even the Lincoln Center Jazz Orchestra. Just to complete the 1972 stories, our high school music kids took a field trip to hear the Chicago Symphony Orchestra that year. Yowzah! I have no idea what tunes they played. I just remember being gob smacked by (again) the power and precision of the CSO.

Thus, my live music jones began!

COFFEE WITH KATIE!

We hosted a birthday party yesterday & in our typical family fashion, sang the most off key rendition of Happy Birthday that’s ever been sung. I don’t usually think much about it but last night, I lay in bed replaying the terrible “music” we record every birthday celebration & thought about how much music infiltrates our lives without thinking about it.

Sure, we all listen to music in the car, while doing yard work, etc., but I guess I’ve never really thought about how much we sing in our lives to add purpose or value. I was like, “Duh, this has been going on for the existence of mankind, Katie.” I’ve just gone through life singing, “Ring Around the Rosie”, “Happy Birthday”, “Jingle Bells”, Twinkle, Twinkle Little Star”, The National Anthem, & so on, in total oblivion.
I went into deep thought that I’m sure most people have already had: that so many of those songs came from a place of purpose I haven’t really put weight to.
I could research & write about all of the things I’ll be googling today because I will be fixated but I’ll refrain from boring you on social media- but it’s interesting to me how these everyday things we do have such meaning.

Now, I can’t say for sure that “Ring Around the Rosie” has a cryptic meaning about disease & death but if it does, think about how people in that time found a way to write a song about it & children still(I think) sing it. Or singing a lullaby to a child at night. We have all the technology in the world to have something to do that for us(thanks, internet & Google) but we still lull (or scar) children with lullabies written when none of that existed & used song to soothe a child to sleep. Celebrations weren’t full of gifts, videos, extravagance, they had songs & tradition; some we still sing today to bring us together & celebrate.

Song has less than uplifting history as well. Slaves used to sing songs in the cotton fields to pace time, communicate & endure in their miserable, awful, situation. Songs like, “Cotton Field”, written by Huddie Ledbetter, in the 1940’s, were written about this tradition & has been covered by CCR, The Beach Boys & Charley Pride.
Death marks tradition for song and music. It celebrates the life & death of a person & began long before the photo slideshow.

Here I go, driveling on. I’ll end there by saying I hope that your visits to Hey Nonny brings joy or meaning as music should & maybe you could make Hey Nonny visits a tradition for you & your family.
